What are some random matches, early on in a stars career with another star that would be considered a marquee match if it happened later? For example, Bret Hart vs the Rock in a Raw back in 97 could fit this criteria since it was before the rock became a star. Eddie vs Cena would of also been much bigger had it happened In 2006 instead of 2003.

Jeff Hardy vs Razor Ramon in 1993 seems to be the go-to answer for this.
In 1991, Andre the Giant and Mick Foley fought each other in a tag match, with Andre teaming with Dory Funk Jr and Cactus Jack teaming with Krusher Kong.

Also, on I believe one of the South African shows in 1996, Yokozuna fought Rikishi when he was under The Sultan gimmick.

Terry Funk took on "rookie jobber" Eddie Guerrero in 1989. One from mid-1999 - Rock took on Edge in an iirc surprisingly competitive RAW match before they started pushing Edge and Christian.

Edge has a few surprising match-ups from that initial singles run. I seem to remember he faced Vader in the latter's final match. Obviously Vader got jobbed out hard towards the end, so not that exciting, but on paper Edge vs Vader sounds like a cool collision of two Hall of Fame main eventers from different eras (yes, I know Vader isn't in the the WWE HoF... don't get me started!)

Not so much a match as an encounter, but that time Undertaker killed Tomasso Cuampa when he was playing a Lawyer
If those two would have actually been able to line up their careers and have a match it would have slapped.

Undertaker as "Texas Red" vs. Bruiser Brody AWA televised a 1986 bout where King Kong Brody injured rookie Baby Bull Leon White by shattering his ankle with a steel chair as the starting bell rang. Brody was murdered the following year and White went on to become Big Van Vader.

Actually speaking of "young Edge", there is a rookie Edge vs Owen Hart match on the Network from Breakdown In Your House which is about 10 minutes long and f***ing incredible. Can't recommend it highly enough.
JR references PWI's Rookie of the Year Award, noting Owen won it in 1987 and Edge "might be in line for 1998" - actually, some guy called Bill Goldberg got it...

Om that note Cactus Jack vs. Jumbo Tsuruta from 1990, IIRC. Mick surprisingly has been in with many of the greats.

There's fan footage out there of Bret defending the WWF title against Savage in Japan in 1994. That would have been an amazing match for King of the Ring 1994 - a proper passing of the torch for Bret.

Macho Man vs Steve Austin from WCW Saturday night in 1995.
That match happens in 1998 WWF and it's a Wrestlemania main event level match.
Imagine babyface WWF Champ Stone Cold vs Return crazy heel Veteran Macho Man? The promos would have been out of this world.
I think that and Bret vs Rock are the two biggest ones for me.
