Part of Jay White's gimmick in NJPW is this, and he is really good at it. I would say even say he does it to a level that is unmatched by anyone I've ever seen
While not a individual, when Amasis faced Ophidian in a casket match in Chikara, they did a lot of countering each others moves. Being a former tag team it played right into the storyline of the match.

Samoa Joe and AJ Styles had a match at TNA Sacrifice 2007 where the entire story of the match was basically that both guys had wrestled each other a million times and there were no surprises. If I remember right, most of the match has them countering or moving out of the way of the other's signature moves. It was a fun little match.

First that came to mind was the series of three classics between Samoa Joe and CM Punk in ROH.
