The easiest answer here would be anything involving human creativity or emotion. Things like writers, scientists, psychiatrists, public relations managers, even clergymen.
Sure, SOME of their work would certainly be able to be automated or even artificially developed, but the wildcard factor of the human mind is one that will always have some organic hand in it.

It's not a matter of what jobs a robot can't do because give it a few decades and that'll be a tiny number but what jobs the (small c!) conservative part of human nature doesn't want them to do. Therapist, teacher and nurse off the top of my head could be done by machines either now or in the near future but anyone born before say...2010 is always going to prefer a human for those jobs so human alternatives will be available until we all die out. As for the tastes of future generations who knows? Attitudes change quickly, trains where I live are self driving but a human is always in the drivers carriage with little to do as to reassure elderly passengers. I imagine middle aged and younger passengers don't care and the "train driver" will be phased out in 10 years or so.

I agree that a standby pilot will probably always be necessary, but I don't think we're that far away from flights that are 100% automated.
