In Kingdom Hearts 2, I had a much easier time with Final Boss Xenmas than I did against mid world boss Demyx. At first he’s not too hard, then he starts throwing up those damn water barriers and suddenly he’s godlike.

Shao Khan in mortal kombat 9 (the reboot one.) he's such a cheap bastard in the final fight where you are forced to be Raiden to fight him, he spams every move he has, his moves cause double the damage compared to other characters and he absolutely destroys you with his xray move if you manage to beat him in a round.
it was such an anti-climax getting to face him in mk 11 as he's such a push over in it despite him supposed to be the same version you faced in mk9.

Let's go old school with a few select Super NES bosses. Scarface in Smash TV is egregiously hard. You have to take care of his entire shield and his face, and then he reveals an entire new set of shields and his bone face and he moves at a much faster clip with homing shots. It's also dependent on RNG if you can get lobbers to destroy his face. Even speedrunners tap out at that and stick to easy mode where it's just the first arena. Kaiser Sigma in Mega Man X3 has a really small hitbox on him. It's aggravating if you don't have the Z-saber. What also doesn't help is the chase scene afterwards which makes it all the tougher.Dracula in Castlevania Dracula X with all the pits and it feels more like a one hit death than a true fair boss fight. Yeah, without Zero's Saber it's a big pain in the ass to beat.
Another from Megaman, Wily-3 boss in MM2, due to the limited ammo you have for the Crash Bomb which is the only thing that can destroy it.
