On the first ever UK taped Smackdown back in 2004, Hardcore Holly had a Title shot against JBL in a no DQ/street Fight. The match was pretty decent overall, but it ended with JBL picking up a steel chair, walking over to Holly, hitting him on the head and getting the pin. Now, a stiff chair shot to the head should definitely be a match ender (unless you're watching Tanaka Vs Awesome), but there was no build to it, there might have been a distraction leading to it, but I remember being in the arena, there was almost a collective "huh, ok". On that note, AJ Styles pinned John Cena after a single chair shot to the back in the No Mercy 2016 triple threat match with Ambrose (specially bumped to be the main event curtain jerker due to the presidential debate that same evening)

The Rock pinned Chris Jericho with his float over DDT during a match on RAW in 2001. Which is odd considering that even though Rock has had that move in his arsenal dating all the way back to his Rocky Maivia days, the float over DDT was never ever considered a match ender. In fact 90 percent of the time he didn't even go for the pin after hitting the move. I've also seen Rock beat Rhyno with the DDT.

Yep, during the Invasion, he did it at least once, along with also getting taken out with a Gore. I think this was pre-neck injury, where WWE did seem to be toying with the idea of Rhyno as a main eventer, so they had him mixing it up with Rock a bit. I think the DDT pin happened in an elimination match.

Eddy Guerrero pinned Essa Rios with the sit-down crucifix powerbomb. I know that was his finisher back in his early days in Mexico, but to my knowledge that's the only time he used it as a finisher while working in the USA.
And I'm pretty sure I remember Rock pinning Bull Buchanan after a DDT too.

Undertaker pinned Rikishi with a DDT in 2001, but tbf, it was a damn fine looking DDT. Rikishi sold it like death and its one of the few times I can recall a DDT getting "oh shit" reaction from an Attitude era crowd. But still, an oddity for Taker even then!

But there was that time at WrestleMania that Chris Benoit beat MVP with the Diving Headbutt. Which I don't think up until that point he had ever won a match with that in the company.

I was watching Breakdown 98 and Bradshaw/Vader have a pretty good match. Vader kicks out of the Clothesline from Hell and Bradshaw unleashes a big-time weapon to finish him off....... a neckbreaker.
Which wouldn't be that notable except for JR insisting that it was a "modified" and "unique" neckbreaker. It was a regular ass neckbreaker and JR slobs his knob over it three or four times over. I know he always liked Bradshaw but dear lord

Jimmy Snuka did this quite a bit in his late-'80s/early '90s WWF run. The Superfly splash was rarely pulled out against non-jobbers. He'd win with running headbutts, diving headbutts off the second buckle, sometimes cross-body blocks.
Beefcake's "high knee" was another one when they wanted him to go over but not put his opponent to sleep.
A one-off one that comes to mind is the Big Bossman beating the Mountie at SummerSlam '91 with what later would be Bob Holly's Alabama Slam, after Mountie had already kicked out of the side slam finisher.
