I think the 9/14/98 Nitro is generally considered the best episode of all time, with Flair's return and Sting vs Goldberg. But, let's not forget, it did have an amazing Wrath vs Renegade match, as well as the beginning of the infamous "Scott Hall is drunk" storyline where he pukes on Eric Bischoff.
SummerSlam 2002 is pretty awesome top to bottom, minus that awkward Howard Finkel/Lillian Garcia segment.
What are some other examples?

WrestleMania 19 featured the Miller Lite Cat Fight girls segment.

There was a Dynamite in January 2020 which was decent, except for the Nightmare Collective ruining a Riho/Statlander Women's title match.

even if the match quality wasn't there in every match, the nostalgia more then made up for it at ECW One Night Stand except a dud match between Eddie and Benoit

The instant replay debate at WM 7 Why does that not ring a bell with me ? It was cut out of the Coliseum Video, probably for good reason. It had Paul McGuire and George Steinbrenner arguing over instant replay, I think because it was an issue in NFL and was related to the Warrior/Slaughter rumble match. Vince talked over them while they were still going at it and at the end Bushwhackers were in the tape room messing up the tape acting like goofballs. Lots of scenes were cut from that PPV for the video and this segment probably for good reason. I know it made it to the 1998 Home Video release, not sure about the anthology.

Most people seemed to agree that AEW Revolution was a top to bottom great show... except for Thunder Rosa vs Britt Baker for the belt, one because of the finish, but two because Rosa was working hurt and the match never really clicked.

WM14 is considered the beginning of the Attitude era by some and for good reason. Most people also forget the tag team battle royal at the beginning as well, for good reason (only notable thing it did was have the return of LOD in their LOD 2000 gear).
