For most part, based on anime adaptations based on manga and light novels. Sometimes the manga is ongoing as the anime airs, which causes some kinks in the anime itself. Fillers, changes in story, that sort of thing. Like take Fullmetal Alchemist. First anime added a lot of stuff, and the manga story more or less ended even before the halfway point. Many years later Fullmetal Alchemist Brotherhood aired which was far more accurate to the source material.
So, what anime do you want to be remade more accurate to the source material. Less to no filler, no altered story because the original source hasn't kept up yet?
For me, Eyeshield 21. Fun series in manga, anime just felt lacking.

Yu Yu Hakusho could be ripe for a re-adaptation to see more modern animation practices, especially for the fights.
As I understand it, the Manga had a whole section of Yusuke doing good deeds as a ghost before it became a battle series that the anime skipped over that could be neat to see for the sake of a more accurate adaptation.

I think Trinity Blood had so much potential but just missed the mark. I’d like a reboot of that, with some tweaks.
For starters, I’d start with the event that set everything in motion to begin with, the colonization of Mars. I’d then fast forward the series to the main timeline, but frequently do long flashbacks featuring Father Able and some of the Methuselah, not unlike how Highlander: the Series did but flesh the flashbacks out. This would necessitate long arcs as opposed to quick progression like the original did. What typically took one episode should take several episodes.
The original rushed things and did not explain a lot of things, so that should be avoided. I also think some of the lore is…..just a little convoluted. The alien-derived nanomachines is an extraneous detail. The Methuselah can simply be the result of an infection that is Martian in origin. The Crusniks can be the result of trying to cure the infection, where most subjects died and the 4 that did not became hyper-supernatural beings, prompting the research into a cure to get terminated. If, at a later date you absolutely need to introduce aliens, the infection can be a byproduct of an alien species trying to terraform Mars.
By taking it slow and doing flashbacks to times where Able felt his heavy handed approach harmed mankind and its development, you can flesh out all of the characters, explain why every episode doesn’t end with Able pulling a Popeye, and cause you to root for more side characters.

With the new Uresei Yatsura, it makes me think we could really use a new Ranma 1/2. This is my top choices there are some great storylines in the manga that the original anime never got to, particularly the Herb, Ryu Kumon, and Saffron arcs.

Agreed, and like a lot of these things, I think that it'd be best to not try to replace the old one, so to speak, but to have it be something worthy in its own right. I do think it might throw people, though, to an extent that some characters like Nabiki would probably not be quite as brutal as she is in the anime, if I remember correctly.

Char's Counterattack... Just remake the whole thing but with more characters we actually give a damn about returning, and with some added backstory showing how Char went from "We must save the earth maaaan!" to "F*** the Earth! Let's destroy it so all of humanity has to move to space and become psychic!"
also Gundam F91... Give it the full fifty episode treatment it deserved to properly explain and flesh out the story and characters.

Anything that ended before the original work or has an insane amount of filler episodes, for the adaptations. Like Gantz for the former or *insert inescapable Shonen Jump adaptation until they started stopping for seasonal content here* for the latter
Otherwise, only stuff that's an anime original with something interesting that might be worth revisiting. Like Psycho Pass after the end of the first season.

Gantz def, they missing a lot since they stopped adapting it early on They do have the Gantz O movie but def could do the whole series and probably rewrite that ending since it dragged at the end

I know it's not likely, and even less likely to get localized, but I've been wanting a remake of Kinnikuman with Ultimate Muscle's art style for a long time. Or just a straight Ultimate Muscle remake, going all the way to the Time Chojin arc.
