Feel like Legend of Korra would've been a significantly better show if they'd ditched most of the supporting cast after the first season. Asami eventually found her footing but Mako and to a lesser extent Bolin never really did, to say nothing of the wealth of other characters from later seasons who just hung around for some reason, and it led to a lot of superfluous subplots and bloat trying to give people something to do even though they really had nothing to actually contribute.

Just about everyone in Dexter besides Dexter.
The level of incompetence of the Homicide department made me just hate everyone, and while most of them eventually get killed anyways, I didn't need to spend several seasons with LaGuerta or Batista because their side plots absolutely served little purpose to the show. Eventually, just about every character on the show succumbs to some kind of dark impulse or exhibit it throughout the show, so it gets old after a while, especially when no one is ever shown to be on Dexter's level, as he is always 5 steps ahead even when he majorly screws up. The show should have been more like The Fugitive or where Dexter goes from town to town trying to keep a low profile but instead finds himself killing.

Melissa on Falcon Crest. They killed the character off in early season 8 despite her being contracted for the whole season, paying her to do nothing. The fan backlash forced them to bring the actress back for a lookalike storyline. But since her contract was for the character of Melissa, they had to give her a second contract for the new role, resulting in her getting two paychecks for the same show. Thankfully they at least left Melissa dead.
Unlike Dallas. Pam Ewing was written out when the actress left the show, yet they did not kill her off and even brought the character back played by another actress. Then they told us she was dying but we never heard from her again. Such an incredibly cheap sendoff for one of the shows most loved characters.

Xander in Buffy. As the show progressed and more characters were added, he just became more and more superfluous to both the plot and the show dynamics. The writers tried to include him more but I don't think the show would have missed anything if he'd been cut or sent to Angel instead.
And we haven't got there yet, but I think they should have written Geralt out of the Witcher with Henry Cavill leaving instead of recasting. The show has deviated from the books enough now that you could easily pivot to focusing on a new Witcher and I think Liam Hemsworth would have a fairer chance at making it work with a new character instead of just stepping into Geralt's boots. As the story goes on it becomes more about Ciri anyway and the show hasn't done the best job of establishing the Geralt and Ciri relationship.
