I am not referring to weapons here, just violent regular wrestling matches.
Matches that makes you go "holy shit, does these guys not know they are supposed to fake this stuff".

The one-hour draw between Manami Toyota and Kyoko Inoue comes to mind. Just absolutely brutal, absurdly fast-paced given it's a broadway, and with some really sick concrete bumps. IIRC, the "retire at 25" policy hadn't been removed yet, so I can't help but think both of those women went in thinking "**** my body, I don't need it in a year or two."

Stephen Regal and Fit Finlay had some crazy stiff matches in WCW. There was the one from Uncensored '96 and a parking lot brawl from years later that I remember being really good.

Talking of Regal his last two big matches with Ohno and Cesaro would count.
Katsuhiko Nakajima is up there with Goldberg when it comes to wrestlers that don't seem to realise wrestling is fake. His kicks are brutal and he's has legit knocked out two wrestlers this year.

Magnum TA vs. Tully Blanchard "I Quit" match at Starrcade '85.
There are weapons involved, but it's not the main focus of the match.

Of the top of my head, Low Ki v. Samoa Joe, Low Ki v. KENTA, Joe v. Kenta Kobashi, Bryan Danielson v. Nigel McGuinness(title unification), Danielson v. Morishima. All good and violent matches from ROH.
Not sure what would be considered "regular" matches in ECW or FMW, but you can't sleep on any of the Masato Tanaka v. Mike Awesome matches.
Favorites from Japan include anything between Kawada v. Misawa or Kobashi v. Misawa. Also check out any KENTA v. Marafuji or KENTA v. Nakajima matches.
Anything involving Vader, Cactus Jack, Stan Hansen would be good to look into as well.

Antonio Inoki vs. the Great Antonio. lol
Love this match you can slowly see Inoki’s anger meter turning red until he kicks the shit out of the Great Antonio.

From the WRESTLE-1 Grand Prix in 2005: Katsuyori Shibata vs. Jun Akiyama.
Shibata starts the match as fast as he usually does and ends up busting Akiyama open hard way with a kick. Akiyama then leaves the ring, legit pissed, to cool down. Shibata follows him outside....and then it's on. Akiyama goes insane on him. Throwing him into the crowd and hitting him with chair after chair after chair. That sets the tone for the match. It has to be seen to be believed.

Magnum TA vs. Tully Blanchard "I Quit" match at Starrcade '85. There are weapons involved, but it's not the main focus of the match. This hit different the first time I watched this match. I was, I think 13 and watching it on a Best of Starrcade VHS. The pace, the grittiness, Blanchard pleading "yes! Yes! Yes!" as his face is getting carved up with a wooden spike. It left a massive impression.

Samoa Joe vs Necro Butcher is one of the best examples of this. But basically anything involving Stan Hansen too.

Shibata vs Ishii, Wrestle Kingdom 10
It's no surprise Shibata ended up needing brain surgery having matches like this
Genichiro Tenryu vs. Shinya Hashimoto 1998 G1 Climax - Neither Tenryu nor Hashimoto get enough attention these days, check this out
