So, I've never had a cat before and there's a four year old cat with FIV at my local shelter who I think I may click with.
Is there much difference between having a pet with FIV vs a standard cat? Anything that would be particularly different or difficult for a first time cat owner?

There's no difference as far as I've seen.
We have a cat right now that the shelter blatantly claimed wasn't FIV. Regardless, we aren't going to give him up, but the concern for FIV cats are that they can infect other cats through bites and possible feeding. If you have just the one cat, it should be fine. Our cat doesn't seem affected whatsoever, but we do give him a higher quality food.
We didn't know when we got him that he was infected, and assumed his small size was due to just being a small cat. However, he did have some kind of sickness that we treated him for. Once he got better, he is much much more active, doubled in weight, and his fever coat has mostly disappeared.
If you've bonded with that cat you will not be disappointed.
