That wasn't the Rumble itself?
As we all know the biggest selling point for the PPV(oh I'm sorry Premium Live Event) is the 30 man over the top rope battle royal. While it certainly has created many memorable moments, lets not forget about the undercard had its moments as well. For you, what are these matches that are personal favorites of yours.
Chris Benoit vs. Chris Jericho in 2001: While it certainly hasn't aged well for reasons I don't need to get into, it was well received at the time, and an overall fun match. The most memorable spot was when The Ayatollah of Rock n Rolla put The Crippler in the Walls of Jericho....on top of the ladder. The match resulted in Jericho retrieving the IC championship, and putting an end to their longstanding feud.
The Rockers vs. The Orient Express in 1991: While I was never was exactly a "workrate obsessed mark" like most of the IWC is stereotyped to be, I know a good match when I see it, even when I was younger. Alot of high flying action between the two, and continuity with Shawn and Marty(such as the double superkick). It's a shame they never were (officially) tag team champions as they were over enough to warrant a reign and matches like these show why.
I can come up with more, but I'd like to hear from others what non-Rumble matches had you sold.

Cactus Jack vs. Triple H.
Foley should've called it a career right there that night. It was a perfect ending, clearing the way later that night to confirm The Rock vs. Triple H one on one at Wrestlemania.

The 1995 Rumble had some good matches on the undercard: Razor Ramon VS Jeff Jarrett for the Intercontinental Title, Diesel VS Bret Hart for the WWE Title, Bam Bam Bigelow & Tatanka VS The 1-2-3 Kid and Bob Holly for the Tag Team Titles. The Rumble match and Undertaker VS IRS were the real duds on that PPV.

Taz vs. Kurt Angle. For one night Taz was a king in the WWE. That had to feel good for the hometown pop that Taz received.
The entire undercard on RR 2000 delivered actually. Hardys vs. Dudleys and HHH vs. Cactus Jack were awesome too.

Daniel Bryan vs Bray Wyatt from the 2014 Rumble
one of the only good Wyatt singles matches IMO

-Rock vs. Mankind, I Quit RR99 (might be a controversial one...obviously I'm not big on the unprotected chair shots, but I like the story of this match and am a sucker for a good quality "Attitude"-style brawl)

Wrestlemania 13: HHH vs. Goldust and Rocky vs. Sultan. Like really? The IC rematch should've happened. Wrestlemania 14: HHH vs. Owen and Rock vs. Shamrock. Both heels, so this one made sense to keep them away from each other. Wrestlemania 15: If WWE went with the original plan of Show vs. Austin for the WWE title. Rock vs. HHH for the IC title or just a singles non-title would've worked. Wrestlemania 16: DUH Wrestlemania X-7: Austin vs. Rock was absolutely the biggest match they could do. So HHH salvaged his show, but dragging Undertaker to a 4 star match. Wrestlemania X-8: Rock vs. Hogan. HHH vs. Jericho. We could've had a mega babyface HHH vs. Rock match. Austin gets Jericho in a rematch from No Way Out. Wrestlemania 19: HHH vs. Booker. Rock vs. Austin. We could've had Rock vs. HHH in a heel vs. heel match. Then Rock drops the belt to Goldberg at Backlash. Wrestlemania XX: HHH vs. HBK vs. Benoit. Rock and Foley vs. Evolution. We could've easily had HHH vs. Rock in a one on one match. While Michaels and Benoit for the title. Wrestlemania 21: HHH vs. Batista. Rock was rumoured to work with Rey Mysterio. HHH is tied up, so this was one to skip the match. Wrestlemania 24: HHH vs. Cena vs. Orton. Rock was at the HOF. Take HHH out of the triple threat. Cena and Orton have their one on one. Rock vs. HHH could work here. Wrestlemania 27: HHH vs. Undertaker. Rock is busy with Cena as referee. Right decision to skip this year. Wrestlemania 28: Rock vs. Cena. HHH vs. Undertaker. Yes. They both were busy with good feuds. Wrestlemania 29: Rock vs. Cena 2. HHH vs. Lesnar. NEITHER of these matches should've happened. Rock vs. HHH was perfect this year too. Wrestlemania 30: HHH vs. Daniel Bryan. Rock in a segment. This wasn't the year to do it. Wrestlemania 31: HHH vs. Sting. Rock and HHH have a promo war. They teased the match back in the fall of 2014. This was another year to do it. Wrestlemania 32: HHH vs. Roman Reigns. Rock vs. Rowan. Rock could only do his finishers at this point. So it wasn't going to work this year. WWE had plenty of chances to give us a one on one Rock vs. HHH at mania match. But seems they were never interested in this feud, except main eventing B shows.

The Jumping Bomb Angels (Itsuki Yamazaki & Noriyo Tateno) vs. The Glamour Girls (Judy Martin & Leilani Kai) (w/Jimmy Hart) from Royal Rumble 1988. Since it hasn't been mentioned yet.
