I didn't have high hopes at all for Batista v Undertaker at Wrestlemania 23. Batista had not been in good form since returning from injury and Taker obviously hadn't started his 07-13 streak of classic Mania matches. They ended up having amazing chemistry though and I loved the match (and all their others that year).
A few others:
John Cena v Umaga at Royal Rumble 2007 Sheamus v Big Show at Hell in a Cell 2012 Sami Zayn v Johnny Knoxville (I thought it would be fun but didn't expect to love it that much)

Triple H & Stephanie McMahon vs Kurt Angle & Ronda Rousey Wrestlemania 34 Non wrestler, debuting wrestler, broken down wrestler and HHH left to hold it together. Should have been a disaster but somehow was my moty, ridiculously entertaining.

Most immediate thing to come to mind was that Corbin vs. Kalisto Chairs match that had no right being anywhere near as good as it was.

Raven vs Rhyno at Backlash 2001 in a plunder match had no right being in contention for MOTN with a card like that but they really outdid themselves. Also another example of Raven being underrated at playing in-peril — WWE really missed the ball on so much of what he could offer and TNA only really skirted the edges of it.

Cena had a surprisingly fun match with Great Khali and that was at a time when John was still working to improve as a worker and Khali offered barely anything in the ring.

Stone Cold Vs Kevin Owens.
I was expecting it to be an instant stunner and win for Austin. I didn't expect it to be a proper match with Austin taking a suplex onto concrete.

I’m so glad Punk’s pipebomb forced them to change the booking. It could have easily been another Cena domination. After the pipebomb and the storyline evolved you knew it was going to be good. But it was even better than expected!
Say what you will about Punk. It’s still one of my favorite matches.

Kevin Nash consistently having better matches with Bret Hart and Shawn Michaels than they ever had with each other is always one of the unexpected things in wrestling history.

There's a match on PPV from 1997 between the Headbangers and Los Boricuas which is surprisingly really good. And it's got Mosh, Thrasher and Miguel Perez in it.
Big Show/Sheamus, MOTY for 2012. All of a sudden Sheamus does this underdog fight from underneath, and makes Big Show look more dangerous than anyone has in decades.
Also while not on the same level, of all people, Road Dogg and Chyna probably had the match of the night at King of the Ring 1999. Two limited performers going all out on a simple story told to the max, outshining far better wrestlers.
