I've seen this happening a lot more frequently in the USA. I understand it's a Lucha tradition to show appreciation (ie not talking coins as missiles) but can anyone tell me more about this custom?
Is it done for all matches, just the best ones or do people just tip their favourites regardless of match quality? Is it done at the end of the match or at any point?
Then behind the scenes who keeps it, even split for those in the ring or shared around the roster or to a drink/drug fund? Do heels get heat for pocketing money thrown for faces?

It is done for matches that fans have appreciated.
Promotions couldn't always pay the wrestlers fully so the fans threw in money so talent could have some money.
Used to be for the best matches but nowadays fans do it in any match just so to say they did.

I believe the money is usually split between all the wrestlers who took part in the match and the ref as well.
