In reality, why doesn't a Seth, Lashley, Drew (his contract is coming up) or Styles demand a part-time schedule? With the same pay and maybe a title reign, but they don't defend it all the time and don't appear on TV every week.
As a young and up and coming superstar, I guess you have to pay your dues, but an old veteran like those guys, Orton, Rey... etc...
Why bust your ass and work 200 days a year, if you can get away with it and have it negotiated into your schedule right?
I mean, Seth can say to management, he is just important as Roman Reigns is to the company in the big picture.
Thoughts?

I mean older vets have more flexibility in missing house shows in stuff to stay home with family. It's probably a mixture of them enjoy wrestling+they will make less money with a Roman schedule + they don't have that leverage.

Simple answer - none of them are Roman Reigns.
None of them have had nearly the same amount of time and effort put into them to make them the face of the company. Dude has had the top title in the company on lockdown and it doesn't seem likely that he's going to lose it any time soon.

Seth has always been healthy and his family tours with him on Raw.
Roman battles with leukemia and his wife and kids are only at home in Florida. He’s earned his spot to say “I’m working a more part time schedule” because he’s 100% the type of person who would rather walk away than be forced to work full time now. He knows he doesn’t know how long he has with his kids.

Seth's ridiculous wardrobe would be a total waste if only worn around the house.

Most wrestlers do not have that kind of leverage. Additionally, even ones who can ask to be used less would risk losing their spot to wrestlers who are more available.
It's good when someone has the opportunity to assert their boundaries, but it requires a certain level of security to do so without taking on a huge risk.

It was decided that Roman would be the guy to get to the level where he has that leverage long before he got to the level where he has that leverage. Roman was handpicked to be "the guy" and even after he kept failing to get over they kept on trying. Eventually it worked.
Maybe they saw something in him, but he didn't work his butt off any more than any of the other established guys. All those guys worked hard. Roman was just given more opportunities than they were for some reason. If other people asked, they'd probably get told no, or they would not make enough money. WWE was/is again run by the whims of one old man. Vince likes Roman, so Roman can get a sweet part time deal.
(and I actually like the idea of the champ working a reduced schedule. Makes the title defenses more special. A lot of the problem with the absentee champions is that WWE still tries to craft the stories around the champion. The stories should be about the more active wrestlers fighting their way up to earn a shot the champ)

Personally speaking I want Roman in my wwe for a long time. If that means seeing him a limited number of days a year, that’s fine.
