Changing people's attires to make guys join the NWO or Flock was always fun.
The game was phenomenal and easily the best American wrestling game to date at that point, but we used to laugh at some of the bad things. Specials had a tendency to come too early and so you'd get one before your opponent was ready to be beaten. Nothing like hitting a spear and jackhammer on Lodi and having him kick out at 1. Also we would play endless Battle Royals which were amazing, but nothing was worse than being eliminated as Sting or Goldberg on a wayward strike only to respawn as Maya Inca Boy or Brickowski. We hated all those phony guys. I know now that those guys had famous Japanese movesets, but as 7th graders from the Midwest in 1999, we didn't know that, nor would we have cared.

I used Han Zo Mon and Ultimo Dragon the most probably as a kid, I am still not entirely sure why they gave Ultimo the body with the gut.

My copy I changed someone to Charles Wright (Godfather but he'd gone nWo).
Kim Chee and Goldberg were the characters to use in a Rumble. Just big kicks and suplexes. (And Goldberg's overarm leg lock - which he used in real life to beat Mr Perfect in 1999 - was great on battle royals with pins/submissions allowed!)

Favourites would be a long list, I'll try to keep it to my top 5.
Mortis DDP Dake Ken Booker T Juvi
But there are so many more, pretty much anyone could be picked up and you'd have a great time. Only things I didn't like were being unable to pick the managers, though there was the extra controller trick. Some of the finishers, in particular Hogan getting... that and Bulldog getting a slam with very little resemblance to his actual one.

I played as Scott Steiner and had an undefeated streak that made Goldberg's look like Gillberg's.

My tag team champions were Scott Steiner and Dr. Frank, collectively known as Frank & Steiner.
Stupid wordplay tag teams is a proud tradition I have carried on through wrestling games to this day, with my winningest team in FPW being Toto's Africa (Oz and Akeem).

It was so satisfying being Raven and just flicking that joystick to hit the evenflow.

Any wrestler that had a bridging German Suplex in their move set, like Sting, Bret Hart, Saturn, Alex Wright, even Van Hammer, guys like that.

It was so satisfying being Raven and just flicking that joystick to hit the evenflow. Also loved doing it on some of the stages. My favorite being the boardwalk style walkway on Bash at the Beach

Loved the reskinned Japanese wrestlers. Didn't know who they were at the time, but I never complained about playing as Brickowski. We got out copy from a pawn shop. The previous owner had changed the outfit of every wrestler they seemingly didn't like to a slur and colored their ring gear purple. We didn't know how to change it for a week or two. Not a fun memory, mind you, but that was literally my first introduction to the game.

Here's to Scott "Flash" Norton! Don't think I saw his matches, but remember the name from this game. I miss those days. We'd essentially play to knock each other out instead of trying to pin anybody.

I loved playing as Juvi, Kidman, and Jericho. Had some really fun crusierweight matches. I agree that hitting Evenflow DDTs was a blast, as was hitting Diamond Cutters in multi man matches.
I still pop the game into the N64 a couple times a year and have a few quick matches.
I loved Irish whipping opponents into the backstage area of Nitro and Superbrawl and getting cheap count out wins.
