Seth vs. Gunther, probably, after Cody rejects Rollins’ offer. You could have Gunther cut promos about Seth being too cowardly to face him because he wanted to fight Cody instead.

Priest cashes in very soon, Truth wins elimination chamber and with how people are so invested in Judgment Day - we ride Priest vs Truth to Mania for the chance of Truth finally winning the big one. He's a master performer and this angle's as hot as it gets. Yes, it's comedy that's gotten it into our hearts, but Truth can emote and turn this on a dime into something serious. Miz being in his corner and helping coach him through it too. Could be really something great. He has to enter in a Colonial Army Uniform in a throwback to his Confederate Uniform in DC

I’m ok with Gunther if they can’t find him something better. Probably my top choice. Other than that, a Drew/sami/whoever hodgepodge will do.
Undoubtedly Rhea and Becky will/should main event night one.

Rollins will likely try and gut out Mania if anything to lose the belt, even if it means destroying Damien Priest's credibility, what little he has left
Drew and Sami should be involved somehow tbh, they're some of the more over faces and heels they have on RAW still.

Here's a curveball: Seth, as champion, is in the match (assuming he can compete). Cody, as Royal Rumble winner, is in the match. Throw in the winner of the Elimination Chamber, and maybe some more guys (battle royal qualifier, gauntlet match qualifier, etc.). The point is that it's a multi-man match.
Seth has to defend against multiple men because he missed several months of title defenses. Everyone added after Cody has to share the title opportunity because they should just be grateful to be in the match. But Cody, since his chances are being divided with minimal cause, gets to pick the stipulation.
He chooses a match near and dear to his family, one that his father Dusty won four times and never lost (as a matter of fact, the match was only held four times, with Dusty winning all four) - The Bunkhouse Stampede. Basically a cross between a cage match and a battle royal, where the object is to be the last one not thrown out of the cage. Can Cody finish the story in a match where his father left some awfully big shoes to fill?
Edit: I have since learned that not all Bunkhouse Stampedes were held inside a cage, most were just non-cage battle royals (still all won by Dusty). But for the spectacle that is WrestleMania, I think the cage is in order.
