If I absolutely had to, it would have been Bray Wyatt.
It just seemed like they just never fully got behind him, and if they wanted to go all-in, that's the biggest rub they could have given him to put him in the new "supernatural" spot.

I think Brock ending it was pretty perfect. They definitely shouldn’t have kept it going because it was clearly on its last legs as the fans did not buy anyone breaking it and weren’t even into the near falls in that match because of it.

I think no one, because the notion of passing the torch by jobbing X to Y is overrated in today's wrestling landscape, and the streak was only worth something when it was ongoing. Ending it to give someone else the rub looks good on paper, but it's only worthwhile so long as the audience wants it or buys into it. I think ultimately ending the streak just did more to undermine the Undertaker's mystique and kill a fan-favorite storyline than it actually benefited anyone.

Brock is cancelled for the moment, and we don't know if he'll stay cancelled. If he does, it's going to be weird when WWE talks about the streak in the future. They wouldn't be able to talk much about Brock ending it.

Orton, Edge, or Punk.
In terms of Punk, you don't even incorporate Paul Bearer's death into the storyline. Just Punk wanting to make a statement to get back in the title hunt, and beating Taker on the big stage was his was of doing it.
This eventually sets up Punk's road to main event the following year. Sorry, YestleMania doesn't happen in this new timeline.
Punk wins the 2014 Rumble, setting up Punk vs. Orton for the title.
Bryan can face the returning Batista in a #1 contender match at Mania, setting up Bryan vs Punk or Orton at Extreme Rules.

I think Brock Lesnar ultimately turned out to be the right call. For a solid decade after winning at WrestleMania XXX, Brock Lesnar parlayed ending The Streak into becoming WWE's overpowered, overarching final boss. When he lost, it mattered, and it made his opponent a guaranteed main eventer.
As for the suggestion that it never should have ended, I think eventually it had to come to an end because Undertaker's body was breaking down. If it didn't end at any point, how much longer does he continue getting in the ring for that one last ride off into the sunset? Do we really think his retirement match would've been a cinematic Boneyard Match with AJ Styles in front of zero fans?
And knowing that, how much longer do the fans continue to clamor for an Undertaker WrestleMania match? I legitimately think we'd still be getting a 'Taker match at WrestleMania going into this April had The Streak not been broken, because it was so marketable for so long - it was one of the top selling points of WrestleMania year in and year out. I can't imagine WWE or Undertaker voluntarily giving that up until Mark Calaway was a totally broken-down shell of himself.

Brock was the right call at the time, and even with what's come out about him it set him up for a good 7-8 years, even in hindsight on a PURELY business decision, I get it.
If not Brock, let it run to WM31 and have Bray break it (but you'd have HAD to have Bray beat or break Cena at WM30) to establish him as the new top spooky dude.
If not Bray, then either Cena turns heel to break it (but only worth it if he's still got another 12 months of if not full time then at least enough to show up every PPV and once a month for TV), or you have Orton break it at WM21.
