Bringing in Ben Elton after the first series to write Blackadder with Richard Curtis. The first series wasn’t terrible but it just wasn’t as funny. And that’s a big understatement as the improvement after the first series is massive.
Adding the opposition to The Thick of It. They went from three episodes a series to eight and so they needed to give us something other than “Politicians f*** up, they get bollocked by Malcolm with creative swearing”. It gave us a whole new load of people to f*** up and be bollocked by their equivalent to Malcolm.
Have I Got News For You. Replacing Angus Deayton with guest hosts added a whole new dynamic to the show that although still very funny, was probably on borrowed time by that point. The fact that over twenty years later the format is still going and we’re about to get Series 67, suggests that it worked.

René Auberjonois joining the cast of Benson as the weaselly chief of staff: Clayton Endicott III in season 2.
His back and forth with star Robert Guillaume was fantastic.
(And yes I know Rene was also joined by another future Star Trek franchise actor in Ethan "Neelix" Philips in that season as well.)

Count me in on the MASH Winchester train. I do think Frank Burns was a fun foil to Hawkeye, but Winchester was brought in as an equal or superior to Hawkeye's surgical skills. There was definitely meat on the bone to grow Frank Burns as a character and he definitely had flashes in later seasons of showing some humility or kindness, but Larry Linville wanted to go back to stage acting and peaced out.
While, ER got long in the tooth, I do think there were some additions that brought more to the series. Kerry Weaver, Luka, and Robert Romano all come to mind.

Perhaps a controversial one Jefferson was a much better neighbour than Steve on Married With Children. Given that the show would veer further and further into a more silly slapstick style of humor as the show went along, The Jefferson character was far better

What I came in to say. Also Ben and Chris being added to Parks and Recreation I'll also throw in Spike becoming a series regular on Buffy instead of the one shot villain they originally intended

The guest hosts were supposed to be temporary until a full time replacement for Angus was found. IIRC the shortlist was Alexander Armstrong, Sanjeev Bhaskar and Kirsty Young. But Bruce's episode went down so well they kept the guest host idea going forward.

Dr Smith being added to Lost In Space. The pilot was fine but nothing too notible. Adding Dr Smith to the cast and making the show more about him, Will and the Robot and embracing the cheesiness at least gave the show a personality.

Steve completely changed the series from a family driven dramady, into a slapstick sci-fi comedic farce. Steve completely overtook the show. Meanwhile, Jefferson was still a background character. The Bundys were still front and center.

I've been binging the entirety of The Drew Carey Show (THANKS, ARCHIVE.ORG!) and adding Mr. Wick shot the show's quality into the stratosphere.
Here's one that some might find odd: Woody to Cheers. Hell, both Woody and Ms. Alley.

Tommy Oliver joining the Power Rangers. Power Rangers was a popular weekday show, but the Green with Evil arc had everyone talking about it and surpassed Ninja Turtles as the mega toy franchise of the 90s

Jeri Ryan and Seven of Nine effectively replacing Jennifer Lien and Kes on Star Trek Voyager. Adding Worf to Deep Space Nine was also a good decision. It was already a fine show, but more Worf is always a good thing.
