I'm rewatching a lot of his career. I always liked him. Do you have any recommendations?
My list is
Austin No Way Out 2001
Cactus Rumble 2000
Undertaker Hell in a Cell Mania whenever it was
Batista Hell in a Cell 2005
Some of his matches with Shawn really dragged.

The Bryan match at 30 is one of my all time favourites. I flipped my wig when he put on a chicken wing

vs HBK at Summerslam 02 and vs Bryan at Mania 30 maybe two of the best matches I’ve ever seen.
He also had a scorcher with HBK on a Raw late 03 I think?
Vs Mankind Cage match at Summerslam 97 vs Jericho Fully Loaded 00 The Mania triple threat with HBK & Benoit All of his Taker Mania matches with Steph v Ronda & Angle
I’ve never been a massive fan of his character and he has had some dull long matches but he’s had some belters as well.

Of ones not mentioned yet, I’d go with the Roadblock PPV match against Ambrose, the Raw street fight against Cactus Jack at MSG in 1997, and the IC Ladder match with The Rock.

Never been a big fan but when he is on his game, no pun intended, he really is great and has had a lot of top matches but when he isn't he has also had a lot of stinkers too. He either has great matches or stinkers, I don't think he has had many middle of the road ones. My favourites are his matches against Cactus, Bryan and stone cold. also had a very good one with Taka Michinoku to.

vs. Cactus Jack at Royal Rumble 2000. vs. Rock at Backlash 2000 and Judgment Day 2000. vs. Shawn Michaels at Summerslam 2002 and Raw 12/29/2003. vs. Batista at Vengeance 2005 in Hell in a Cell.
EDIT: Almost forgot his match with Chris Jericho on the 4/17/2000 Raw for the WWF Title, even though the decision was overturned.

I like all of those you mentioned, but especially the Ladder Match. So many WWF/E Ladder Matches have been high flying spectacles, but this one was more of a blood feud street fight with a Ladder Match gimmick. It fit both guys’ styles better and over time really stands out from most other Ladder Matches. I think it shows that gimmick can be more than an apparatus from which to fly off of.

Absolute favourite is the street fight against Cactus Jack at Royal Rumble. I've always liked his match against Owen at Wrestlemania XIV.

TAKA Michinoku, sometime in the spring of 2000 on Raw. Probably the peak of Hunter’s peak, you actually think TAKA’s going to win the WWF Title during that match.

When Hunter wants to, he can make anyone look like they could beat him

Backlash 2000 is probably my favorite wrestling match/moment of all time so I'd have to say that one.
Other than maybe Mick Foley and Edge might be up there too HHH has to have one of the longest list of classic matches with most of them being some kind of gimmick.
He's had his share of great regular matches but in general he did his best work in gimmick matches. He was usually amazing in hell in a cells, street fights, last man standing, 3 stages of hell, iron man, elimination chambers, etc.
It wouldn't be his greatest match but maybe his single greatest performance was Wrestlemania 34. He completely carried what could have been a complete trainwreck with a finished Angle, Ronda in her first match ever and Stephanie in her first match in 15 years and it ended up being one of the best matches of the year.

Many already mentioned like the Three Stages of Hell with Austin, all of his work with Mick Foley and the Bryan match at Mania 30, but I often go back to his Benoit match at No Mercy 2000. Shame it was with *that* dance partner but Hunter puts in some damn fine old school work in it.

My top 10 would probably be:
Royal Rumble 2000 vs. Cactus Jack
No Way Out 2000 vs. Cactus Jack
Backlash 2000 vs. The Rock
Two Man Power Trip vs. Benoit & Jericho
WM XX triple threat
3 Stages of Hell vs. Austin
Evolution vs. The Shield at Payback
WM XXX vs. Daniel Bryan
SummerSlam 2002 vs. HBK
Fully Loaded 2000 vs. Jericho
Honorable mentions: The Dallas 10-man tag on Raw in 2000, the Raw match where Jericho "won" the title, Iron Man vs. The Rock, Evolution vs. The Shield at Extreme Rules and the ladder match vs. The Rock.
