I mean as in a wrestlers career is well underway, they're well established and they add new moves later on.
Cena did a horrible springboard stunner, the taka driver and a terrible dropkick. I still like him though.
Taker with the hells gate and various others.
Stone Cold in 2000-2002 with the snap spine buster and he also started doing a lot of flair style chops by late 2001 which he never used to.
Any favourites worth mentioning?

Jericho had the tendency to add new finishing moves as his career progressed, first with the Codebreaker then the Judas Effect.

HBK started doing flair like chops during his second run. He also added that Modified figure four.
CM Punk when he was going from new nexus to Best in the World Punk. Was when I recall starting to do the Macho man Elbow.
Babyface Miz doing all that offense stuff.

Quite a few older guys add the Canadian Destroyer because the opponent does most of the work. Dustin Rhodes maybe being the most notable example.

Kane started using a claw to the face in his feud with Cena don't think it lasted long.
Same with HHH using a choke on his return in 02.

Tito Santana was inactive for a few months in 1991, when he came back as El Matador he had a new finisher, the El Paso Del Muetre (a flying forearm to the back of the head of a hunched over opponent).

Tenryu with a Brainbuster. Naming it "53 Years Old" was such a flex, too
