The double knockout finish? Seriously every review of the Last Man Standing between Rock and Mankind or HBK and HHH or the Sabu/Rey ONS 2 match all just straight say that finish sucks? I mean its not really that bad, sometimes it can be a cool finish...

Sometimes it can work, as in the case of Rock and Mankind, but even Foley admitted it was pretty much a cop out of a finish and cheated the fans out of a real winner.

These types of finishes are the catch 22 of wrestling bookers: they can either be successful, having the audience want more or be failures since the fans didn't get to see a clear winner and indicating a long drawn out fued.

Because in most cases it's boring, done too early, and just ends up wasting the viewer's time.

With the HHH HBK one, they pretty much stated that THIS MATCH WILL BE THE END or something along those lines. That basically it would be a full stop to the feud and there would be a winner.
So they cheated us basically.

It can work if the match doesn't have a special stipulation (i.e. Ironman, HIAC, etc) AND if it's not the final match of a feud. Otherwise it's a good way to further a feud. But in the end it's an easy way out for the bookers: nobody wins, nobody loses, back to square one. And that makes the match ultimately useless

I did like the HBK vs. HHH one because HBK looked like a badass when he refused getting help walking to the back.

Sometimes they are necessary to add realism and add to the feud, as in the Royal Rumble Last Man Standing Match from 2004 with HHH and Shawn Michaels.

I think since most people operate on the fact that wrestling is pre determined and a majority of what you see isn't that serious, they feel ripped off. Unless its one of those time where you absolutely cannot see either man getting up (RVD/Sabu for example) then they feel cheated.
