I didn't really watch the show, but I did see a few episodes. And, in these episodes, I didn't much criminal activity going on. I mean, there was a murder or two, but the show was about a mobster; and I didn't see and mob business going on. So, just what kind of illegal activities was Tony Soprano into? Drugs? Gambling? Prostitution? What was it?

They were heavily into the construction and garbage industries, skimming money in various ways from each.
There was also a stolen car business, shipping vehicles overseas.
A few high class card games were shown, with everyone from Frank Sinatra Jr to David Lee Roth to (I think) Lawrence Taylor taking part, playing themselves.
There was some mention of drugs as well, and sports betting. Some dealing in stolen goods (an example is Patsy Parisi with his designer suits)
