So I remember this Asian wrestler that was managed by Mr. Fuji, and he had Kanji written all over himself. Anyone remember who this was and if he is still active?

You may be thinking of Hakushi (who wrestled elsewhere as Jinsei Shinzaki ). And that wasn't Mr. Fuji. It was Akio Sato, but he use used another name I can't remember.
As for your other question, I'm not sure if he's still active.

He is semi-active, but spends most of his time running Michinoku Pro Wrestling in Japan, taking part in matches on and off.
