Mr. Wint and Mr. Kid were awesome! Not only did they kill a lot of people, including a little old lady, but they would crack wise about it...IN TANDEM!
They had a humorous menace to them that makes them my favorite.

Dario.He was a lunatic, he was played by Benicio del Toro, he was in my favorite Bond movie of all time, and he had one of the best deaths in the series.

Mr. Wint and Mr. Kid were awesome! Not only did they kill a lot of people, including a little old lady, but they would crack wise about it...IN TANDEM! They had a humorous menace to them that makes them my favorite. The not-so-subtle hints that they were gay lovers made them even better somehow. I voted for Red Grant. They should not have killed him right away. He should have been Bond's top SPECTRE rival until right before they introduced Bond to Blofeld, perhaps even have Blofeld get away in that movie because Bond had to take time to deal with Grant permanently.

Always have had a soft spot for Jaws. I kind of wish they'd bring back another version of him for the new Daniel Craig "Bond" films. Perhaps Kane could do the role some justice? And hey, it would make the Bond films more like they used to be, and less like BOURNE IDENTITY clones.

Jaws and Oddjob are obviously up at the top. The fact that neither say anything (except for Jaws' cheesefest line in Moonraker) yet both are so memorable shows that they are everything a 007 henchman should be. Visually and physically intimidating. Xenia Onatopp, Zao, Dr Kaufman and Stamper are also favourites of mine. Zao and Stamper worked well in the role of the henceman that could kick your ass and probably enjoy it. Xenia not only kicked ass but she was smoking hot (plus she killed people by squeezing them between her legs for pete's sake!) while Dr Kaufman was dramatically under-used in Tommorow Never Dies. He could have been made into a nicely developed character, instead he got about 2 minutes screen time. However possibly my favourite of all time was May Day who was the only good thing in A View to a Kill along with Max Zorin. Another woman that could kick ass, plus I had some sort of weird crush on her when I was younger. She got away with wearing all these crazy things because Grace Jones looks so exotic in that film. Shame she seems to be crazy in real life.
This talk of hencemen makes me annoyed about the Bond franchise re-boot. Don't get me wrong, they're good films but I miss the hencemen, the memorable baddies, Q and Moneypenny, the gadgets etc. Come on! I know that they wanted to bring the franchise up to date and all that but there's no point modeling it on every action film out there at the moment. They could have (and should have) kept more of the original elements. I am however sick of the female love interest who is promoted as being a match for James Bond but then ends up not being half as tough as him. This is what nearly all the Bond Girls were like during the Dalton/Brosnan years and so was the last one in Quantum of Solice. I much prefer the witty, intelligent good looking girls to the "I can kick ass" good looking girls. Agent Fields was in Quantum for about 4 minutes but she wiped the floor with the other one who I can't even remember the name of (and I'd call myself a big Bond fan).

I can't remember Moonraker because I haven't seen it for about 10 years but I watched The Spy Who Loved Me on NYD and Jaws is fantastic.

Red f***ing Grant.
That guy set the standard for big, strong, blonde henchman. IMO no one has topped him since.
Honorable mention to Emile Locque. Who I wish had been given a stronger part in FYEO. That guy was just creepy.
