Depends. I think most of them were written by Jim Johnston, with some done by Jimmy Hart. A few of the songs were licensed though (ex. "Real American").

Hart composed many theme songs for wrestlers in the WWF and WCW. Some of the wrestlers for whom he composed music were Honky Tonk Man, Jimmy Snuka, Brutus "The Barber" Beefcake, The Rockers, The Hart Foundation, Crush, the Fabulous Rougeaus, Dusty Rhodes, the Legion of Doom, the Nasty Boys, Ted DiBiase, the Mountie, Hulk Hogan, the nWo Wolfpac, and 3 Count. One of Hart's most notable compositions is Shawn Michaels's entrance theme, "Sexy Boy."[4]

Dave Wolf (or however his name is spelled) did a few during his association with WWF. He's the one that came up with Badstreet USA for the Freebirds, in fact.

All 3 share writing credits for it. Yeah, Demolition's theme was the same way. In 1987, Demolition originally entered to a rough, instrumental version of what became their classic theme. Rick Derringer just added lyrics and vocals later.

Jimmy Hart had Gold records for whatever group he was in during the 60's so he had a knack for it.
I love the music maker in the Wrestling documentary that shows how simple it is to come up with tunes.
As he makes Vaders and even though he probably came up with it a year before hand, it seemed like he just did it on the spot.
