From what I've read in the description this doesn't sound like the old arcade game at all.

There was more than one coin-operated Simpsons game? Yes. The Simpsons Bowling was released around 2000. Much like the PS1 wrestling game from The Simpsons, it wasn't that good.

There was more than one coin-operated Simpsons game? Yes. The Simpsons Bowling was released around 2000. Much like the PS1 wrestling game from The Simpsons, it wasn't that good. The Simpsons Bowling arcade game was WAY, WAY, WAY better than the wrestling game. It may not have been overly excellent, but it was easily playable. I tried it once or twice, but my friend was hooked and set quite a few high scores. It got a lot of play at the Wal-Mart here, but it had help as it was only .25 to play. Honestly, I'm surprised that wasn't ported to the Wii. They had the Simpsons Pinball which was fun, but something was wrong with the couch, it had no power going to it so you couldn't get any bonuses from it. I'd really like to see the new Simpsons Arcade game, but I fear they might "Re-Shell" it. Hopefully if it's any good, it hits XBLA.

This game had really weird licensing issues if memory serves. And according to Steve Jobs, all the best games ever made are on the iPod Touch, so why would you want it on console? Okay, the game needs a reshelling. It was made in like season 2. All the villians can be best described as "Generic Henchmen." Let's put the last 19 seasons worth of characters in.

Well, I'll admit, after I saw it, it does look radically different. I didn't read much into it when I posted it, but it operates as a one-player game with Homer as the character. The downside to the whole thing is that it's only available on the iPhone or iPod touch.
However, in spite of that, it does operate within guidelines of the original, such as the locations and minigames.
And, here's the final boss (crappy video link, but it was the only one I found):
