Omlets need some kind of dairy to whip into the eggs. Maybe up in cheese-land, but not necessarily. Sure, a few pats of cold butter make a nice omelet better, but one can live without. Either way, let the thing set a bit, give it a nudge on all sides with a rubber spatula to loosen it, and flick that wrist. Kill the heat, slide onto the plate, and fold as it drops. Basic egg preparation: scrambled; fried (sunny/over); poached (best using 3:1 water to vinegar ratio); hard-boiled (cook however you please, but shock under ice water for 5-10 minutes immediately after and then immediately peel them). Then you have the French Toast option, which does require the milk to thin the egg. Egg salad: hard boiled eggs, mayo, mustard, salt, pepper, season at will, optional celery and/or onion. Deviled: hard boil your eggs; split in half; mash yolks only with mayo and anything you'd like. traditional: mustard and paprika. whimsical: bacon, green onion, cheese, etc. You need a TON of eggs to make cake from scratch. More yolks than whites will make a yellow cake; more whites than yolks will make a white cake; brown eggs yield chocolate cake; you don't want to know how many live chicks you need for red velvet.

Most Omlette recipies call for some kind of dairy. Even those that call for water usual call for salt and pepper for taste. That is still more than just eggs. But maybe I'm taking the OP to literally

Three nights ago I finally made scrambled eggs right (not dry/flat... nice and moist and fluffy).
I've had them everyday since.

Omlets need some kind of dairy to whip into the eggs. Negative. If you look at recipes from outside of the United States, where eggs are generally treated much different... The best omelets are three eggs, with with maybe a bit of water (barely half an ounce per egg). Add dairy? They become those slimy things you all know and hate. Add water? They become fluffy. Viciously hot 10" pan, eggs whipped only to break the yolk, and on and off the heat to get to the desired consistency you like. Be sure to use a silicone spatula if you can't fold it yourself, since molten rubber is not usually an offered omelet ingredient. Personally, fried eggs are my favorite, but you'll need a bit of fat (butter is preferable for flavor, but not for the cholesterol issue, and oil is...well, just coat the pan and no more) and either well seasoned cast iron or a decent non-stick, and either be good at the flip with a spatula or good at an egg flip. Add some meat (I like a good hamburger steak (80/20 chuck, please), a steak (sirloin is okay for breakfast, medium rare, please) or a ham steak), home fries with lots of onions, and a cup of PIPING hot black (no sugar, no cream...the original meaning of "black" coffee) with perhaps a side of sourdough or rye toast, and I'm a pretty happy guy. Naw, I'm not particular or anything. That's why I rarely go out for breakfast. I know what I like, and I know how to cook it well.

Just eggs eh? Well here's a personal favorite of mine.
The Pile O Eggs
Ingredients: Lots of eggs.
Step 1: Remove eggs from carton. Repeat with each additional carton.
Step 2: Carefully arrange eggs into a pile.
Step 3: Enjoy!

Throw it into a hole in a hot spring, boom, boiled egg you can sell for if memory serves 50G. Good way to make a tidy sum until you can afford a cow.

Make some Basmati rice, then put it in a mixing bowl with two or three eggs, stir then fry in a skillet for a bit. Fried Rice is fun and easy.

Cornbread? That thread about it the other day has me craving it. I don't know a thing about cooking though so I'm sure there's more to it than eggs. If you can't stick it in the microwave, I don't eat it unless a restaurant makes it for me.

You just need some toast and you have a very tasty meal.
