Kaiji, even if you don't like... rock-paper-scissors(?) this show might change your mind. Funny thing. The main characters of all three anime is voiced by the same guy.

Some of my favorites which I'd recommend: Neon Genesis Evangelion: if you haven't seen it, frickin' see it. A classic that revolutionized anime. Cromartie High School: bar none, the most hilarious anime I know. It's a parody of the "tough guy" anime that featured delinquents from rival schools, but in doing so also has the nonsense comedy and humor-of-everyday-life that makes it the "Seinfeld" of anime. Monster: great mystery anime with fantastic pacing, a lot of suspense, and masterful storytelling Welcome to the N.H.K.: a dramedy about the hikikomori (shut-in) phenomena. It starts hilarious, but its ending is really touching and does a lot of good commentary about social issues. Also, the end credit song from the second half of the show makes me cry every time. Sayonara Zetsubo Sensei: another good comedy that combines absurdity with everyday social commentary Full Metal Panic!: a classic that combines sci-fi action with high school comedy. I'd mainly recommend the first season, because it strikes the best balance between those two aspects. Black Cat: great action/adventure with a memorable cast of characters, creative settings, and neat action. Just a fun series all around.

Sengoku Basara - Imagine the Warring States period done by Capcom. Gurren Lagann - Hands down the rebirth of Super Robots. Space Runaway Ideon - The anime that Evangelion stole a ton of ideas from. Area 88 - Some of the best dogfights you'll see. Period. My Bride is a Mermaid - Very funny series. Pretty much it's the most bizarre shotgun wedding ever. Eyeshield 21 - Easily ranks with Captain Tsubasa as one of the best sports animes ever.
