What is the difference between a no DQ match, hardcore match, street fight, and extreme rules match?

The difference is....ummm.....the names? Basically. You could also say that in Hardcore matches pin falls count anywhere. Everything else, there isn't much difference.

I used to think street fights envolved an asphault-canvas when I was little.

Don't forget about "Chicago Street Fight". I think the Road Warriors-Nasty Boys SS match was called that if I'm not mistaken

What about the Las Vegas Street Fight that happened on the "Raw Roulette" show when Bischoff was GM.

OK.
No DQ: A match in which DQ's are not enforced but the referee will inexplicably threaten to DQ the heel at least once.
Hardcore Match: A match where anything goes and falls count anywhere, but the ref will act like he can DQ the heel whenever he chooses.
Street Fight: A hardcore match in which the wrestlers where street clothes. Near-Falls occur outside the ring, but for whatever reason, the pinfall ALWAYS happens IN the ring.
Extreme Rules: A match exclusive to ECW(unless it occurs on Raw or Smackdown). In Extreme Rules, there are no DQs or Count Outs. All ECW matches are contested under extreme rules(except when there not). During such matches, referee Mike Posey will threaten to DQ wrestlers who choke there opponents in the ropes. He will also begin a ten count if both wrestlers are knocked out. But the matches are still EXTREME!

I thought no DQ match when the rules aren't enforced very much and the wrestler with the title is allowed to use the belt to hit his opponent to keep the title and be victorious
Hardcore matches = CZW.....EXTREME!!
Streetfight match such as the SD! John Cena v Jesus match at Vengance.
Extreme Rules - gimmicky type matches

We also have the always stupid TNA rules matches, where weapons can be used but if someone interferes it's a DQ.

OK this is the best I can figure . . . I think a "hardcore match" is a no holds harred, no count outs, no DQ match in all promotions. In the old ECW all matches were hardcore matches but you had to pin the guy in the ring (correct me if I am wrong). In WCW and the WWF it was falls count anywhere. However I think it was only falls count anywhere in the WWF during the time the Hardore Championship had that annoying 24/7 rule. I could be wrong.
After the InVasion, but before the "new breed" on ECW, the WWE started shifting away from "hardcore" and instead had "street fights" which are basically the same thing. But like someone else pointed out the guys are usually in their street clothes. It should also be said that in hardcore matches, weapons have a sort of "this was brought specifically for the match" type of purpose while in a street fight the guys just use whatever they happen to run into while fighting backstage.
"Extreme rules" is what in the "new breed" ECW calls a normal old styled ECW hardcore match.
A "death match" I believe is a hardcore match that involves both fire and explosives of some kind.
