In The Line of Duty 4 - not kidding, almost every scene has a fight in it, stars Donnie Yen and Cynthia Khan
Eastern Condors- Sammo Hung, Yuen Biao, Corey Yuen, Yuen Woo Ping and others go to Vietnam to blow up a weapons bunker. Incredible movie!
Ip Man- stars Donnie Yen as Wing Chun (and Bruce Lee's teacher) master Ip man, a modern classic
Above The Law- NOT the Steven Segal movie. Yuen Biao (a prosecutor)and Cynthia Rothrock (a cop) have their own ways of handling the law.
Flashpoint- Donnie Yen perfects his HK/MMA fight style in this movie.
Duel To The Death- A Chinese Swordsman and a Japanese swordsman must fight in a duel to the death, but others on both sides have their own plans for the fight.
Royal Warriors- Michelle Yeoh at her most bada**.

Most popular martial artist right now that's not Lee, Chan, or Li) Legend of Drunken Master (Chan film, but it's pretty much the best MA film ever, so...) Red Cliff (Based on the battle of Chi Bi ((Red Cliff)) during the three kingdoms period.) Get the international version. The Warlords (Based during the Ching Dynasty) Curse of the Golden Flower Hero Mongol Infernal Affairs Seven Samurai (This is perhaps my favorite film of all time, so it's highly recommended) Oldboy Battle Royale
Too tired to think of any others. some good films have been posted in this thread, I'm sure you'll be set for a while.
Although I'm a huge martial arts fan I've never much liked Bruce Lee's films. *runs for cover* Also Li and Chan have tons of excellent films that you've probably never heard of (unless you're a big martial arts fan), might be worth digging deep.

How about The Last Dragon, WHO IS THE MASTER?
A totally fun, bizarre 70s movie involving martial arts is Death Machines, which really must be seen to be believed. A dragon lady has had designed for her three cyber kung fu assassins that she employs to take control of the underworld, and the only man who's on the trail is a wimpy man with a broken arm who gets beaten up by some random old guy in a bar. Highly, highly recommended.

There's a Thai film called 'Chocolate' (Made by the same guys who made Ong Bak) about a young girl with slight autism who learns Muay Thai by watching and copying the fighters training outside her mothers house. It is a simply brilliant film. There's a fight at the end with another autistic boy who has learned Capoiera that is a must see scene!
Also House of Flying Daggers is one of the prettiest Martial Arts films I've seen.

"Shanghai Express" (aka "Millionaire's Express"). Sammo Hong, Yuen Biao, with bit parts by Cynthia Rothrock and Richard Norton. But I want to know... why not Jackie Chan movies? Because I'm well aware of them all so no advice is really needed. And I'm not really a huge fan of the fight style.

The recent-ish one I love and dont see suggested is "Chocolate AKA Fury", the story of an autistic girl raised at a martial arts dojo that picked up everything from watching the guys and Tony Jaa films, when her mother becomes ill she uses her skills acting as a debt collector. From the director of Ong Bak and the Protector, its absolutley great. Edit: Felt like putting up the trailer, I think later today Ill watch this one again.

I'm trying to think of some that haven't been mentioned already. This is a great list thus far. Probably the most glaring omission I can think of is Versus. A great mix of martial arts, swordplay and gunplay...with zombies...who also have guns sometimes. And they re-released it a few years back under the Ultimate Versus name, and basically extended the fight scenes. From there, you could go in a few directions. You could follow director Ryuhei Kitamura and check out the Azumi films but those are more stylish and story-driven than martial arts exhibitions. If you want straight up fights, check out Death Trance, directed by Versus' action director. One of the craziest movies I've ever seen. It's pretty much nothing but asskicking and stunts.
Worse comes to worse, just go to Wal-Mart or Best Buy and grab a compilation set for like $5 or $10. Some of the movies suck but it feels good to unearth some great kung-fu flick you haven't heard of before.
Seeing Only The Strong reminds me of another Mark Dacascos movie, Drive. I've only seen one fight from it but it's one of the greatest fights I've ever seen. But as far as I know, I don't think it's on DVD.
