A few favourites of mine are:
Mankind vs. The Rock (1999)
Cactus Jack vs. Triple H (2000)
Chris Jericho vs. Chris Benoit (2001) (one of my favourite ladder matches but Benoit takes some brutal bumps which can be quite uncomfortable to watch post 2007)
John Cena vs. Umaga (2007)
And of course if you're in the mood for car crash comedy, there's none finer than Triple H vs. Scott Steiner (2003)!

I'm glad a few people have already mentioned Rockers/Orient express from rumble 1991.
That's the best ppv opening tag match I know of.
Someone has it on youtube too, split into a few parts

Submission match between Greg Valentine and Ronnie Garvin in 1990. One of the most underrated/underappreciated matches of all time as far as I'm concerned.
