I think I read somewhere that one of the unwritten prerequisites for working in wrestling is to have a passable Dusty Rhodes impression, and judging from the sheer number of shoot interviews where this comes up, I can totally see that.
Off the top of my head, the other ones that seem the most common are Vince, if anything because almost everybody that's gotten a shoot interview has worked for him at some point or another, and Sandman, just because he's... freakin' Sandman.
Obviously having a very distinct voice is a prerequisite for people to want to do impressions of you, but man, is that ever exemplified in Dusty and Sandman.

Hogan and Macho Man are up there most likely.

Ric Flair and Jim Cornette also seem common.
Foley mentioned a few Verne Gagne impressions, but those are probably fading from the pool of common ones.

Triple H's 1999-2002 promo style has been mocked quite a bit. ("I-ah. Am-ah. The Game-ah!")
You can also put Jim Ross on that list. Good Ol' JR has been picked on quite a bit.

Some that have been impersonated a lot:
Roddy Piper - most notably Bruce "Brother Love" Prichard did a good impression (if unfunny) at WM5, but many do a good Hot Rod.
Ultimate Warrior - many try and do a good Warriaaaah on the Self Destruction of the Ultimate Warrior dvd - such as Christian, Edge and Jericho. Very open to parody.
Randy Savage - again much done impression. A high profile example would be Scot Hall's WCW debut. John Laurenitis - everyone had an impression of him a few months ago - Big Show was even "fired" for his
Hulk Hogan - much done. High profile example would be HBK on Raw leading up to their Summerslam match in 2005.
Ric Flair - so many guys have mimmicked the Nature Boy. Examples would include X-Pac/Syxx/Sean Waltman on WCW Nitro following Arn Anderson's retirement (Nash was Arn Anderson) and Brian Pillman doing an even less flattering elderly impression some years before as part of the Holywood Blondes.
Dusty Rhodes - if you will. Everyone does a Dusty, see his DVD. Big Show's was particularly good.
Stone Cold - I think quite often people put on a husky Texan drawl and try to replicated the Rattlesnake's voice - many of his DVDs have examples.
The Rock - not so much done well but often parodied - the DX nation of domination parody springs to mind
Vince McMahon - done a lot but most famously by DX (along with Shane)
