I'm well aware of Tony Jaa's movies, I've seen Chocolate and just finished the Raid Redemption. These are things I've recently discovered.
What else have I missed out on?

Anything Donny Yen has been in, the guy is amazing, not just with action but with acting as well (as long as you read subtitles).
Red Cliff is a few years old but is a wonderful film, it is a historical drama mostly but has action and it is often large scale.

Seconding Blood and Bone and just about anything Donnie Yen has been in (notably Ip Man). I'm not sure if I'd consider Red Cliff a martial arts movie, it's more like a historical war epic. It's still really good though. If you like that but feel it's a bit too grandiose, check out 13 Assassins.
I'm kinda out of the loop of martial arts movies in recent years, compared to a couple years ago when Blockbuster stores were dropping like flies and I was snatching up random flicks. The girl in Chocolate also has another movie called Raging Phoenix which is more a straight-forward action film.
Nathan Jones was in a movie called Muay Thai Giant, where he turns into the Red Hulk whenever he eats curry (I'm not joking), and though it's more of a family-type film, it's still really good all things considered.
I also remember getting another movie called Fireball which I picked up on premise alone. Basically it's basketball meets underground fight clubs. It's pretty cheesy but awesome.

Red Cliff isn't a martial arts movie, it's a HOLY S*** movie with martial arts.

Ip Man 1 & 2. Possibly my favorite martial arts movies of this generation.

raging Phoenix is really good, stars Jeeja Yanin from Chocolate. True Legend has amazing action scenes, some peolpe hate the plot but I thought it was fine. Merantau or Merantau Warrior is by the same people that did Raid: Redemption and the actor Iko Uwais was supposed to be the new Tony Jaa until Tony left the monastery. Ip Man 1 and 2 are great, Ip Man3 the prequel was alright but not on the level of the other 2. Born to Fight and Bangkok Knockout are by Panna Rittikrai who did a lot of stuff with Tony Jaa are both real fun. I thought High Kick Girl and Karate Girl were both good. Not martial arts but for crazy Hong Kong action/exploitation film I highly recommend Ebola Syndrome, Untold Story and Run and Kill.
