Have the X-Men ever fought any villains that ARENT evil mutants? I know theyve had their conflicts against aliens, but have they ever fought non-mutant villains like the shocker or the frightful four or even the masters of evil? It would be a nice change of pace as opposed to just taking on mutant foes or evil government guys.

Juggernaut is not a mutant, so yeah. Arcade as well. The Purifiers are humans. Sentinels.
Actually a ton of their enemies are not mutants.

Mister Sinister isn't a mutant. His powers were given to him by Apocalypse and he further augmented his powers using SCIENCE!
Also Arcade is human and Mephisto is well... the devil and they've both screwed around with the X-Men plenty of times.

The Sentinels were giant robots. Created by a mutant hating human (Bolivar Trask). Mastermold was the Super-Sentinel, who ended up (in its mind) becoming a "mutant" when he merged with Nimrod, a future Sentinel.
(Fun fact: Trask's son Lawrence, who later attacked the X-Men with Sentinels, was actually a mutant - he wore a weird medallion, which was revealed to be a tool used to mask his true nature from the Sentinels. Let's just say the medallion was destroyed in his 1st or 2nd appearance, and....well, that was that.)
Stephen Lang (human) eventually took over the Sentinel program; he was later absorbed into the Phalanx.
I believe Donald Pierce (a Hellfire Club member) and his Reavers gang were cyber-enhanced humans.
And Cameron Hodge and the Right (another human anti-mutant hate group) were human - Hodge eventually made a deal with a demon to get immortality, had his head cut off which was grafted onto a cyborg body, and then later was assimilated into the Phalanx.

They also became increasingly more involved in the Infinity crossovers. Cyclops and Wolverine fought against Thanos and most of the team being involved in fighting the Magus and Goddess.

Good. I was coming in to say Cameron Hodge, and someone beat me to it. (Fun Fact: Cameron was actually on X-Factors staff until a freak accident by Archangel left him paralyzed) Can we count Senator Kelly? Also, the newest version of the Hellfire Club (a bunch of sadistic children) are non-mutants.

Can we count Senator Kelly? Tough to call him an enemy and thus lump him in with guys like the Purifiers, Stryker, Hodge, Sentinels and Arcade. He never did anything outright violent against them, IIRC - he was just a politician harping on about the issue. But in the end, even he came around to the X-Men's side.
