What's the most disappointing last boss in a video game? Whether they were just too easy or just not what you were expecting, etc.
For me, it's the last boss of Sonic Generations. It was long, boring, and just plain stupid.
Also, Sephiroth's final form. It was too easy and, because of his Super Nova attack, boring. The attack takes about an hour to complete and it can't even kill you.
I guess I'll add Yu Yevon, too. Although I wasn't disappointed at the time. I was just relieved that I had beaten Jecht and I was grateful for the auto-life. But yeah, looking back, it was disappointing.

M.B. in Metroid: Other M has to take this. You get a random first-person bit where you're being swarmed by enemies, and the game ends the second you accidentally shoot her in the background while trying to get them off of you.

To be fair about Sonic Generations, the last decent final boss was in Sonic Heroes. The one in Sonic Colors was alright, but bit too easy. Oh, and Metroid: Other M for the fact that the final (unless you count Phantoon) boss isn't even really a boss. Joker in Arkham Asylum. Was expecting a little more out of the battle. This without a doubt. Titan Ivy was a better boss than Titan Joker.

Kingdom Hearts. Nothing but basically attacking the boss without even having to pause to heal.

Came in to say Joker in Asylum.
Also, Alduin as the final boss in the main storyline in Skyrim. He was just as easy as any ol' dragon you encounter across Skyrim.

I've stated before that I really liked that boss... and I stick by it. Then again I was the one that shot him in my play through and not Reaver. What I didn't like was the Fable 3 boss... with the way they were hyping it up in the game I was expecting something more than teh simple fight than it actually was.

The Biobliterator in the third Ratchet and Clank game. Just hover above it and shoot rockets until it dies.

Kingdom Hearts. Nothing but basically attacking the boss without even having to pause to heal. I'll argue the KH boss was much more fun and challenging to me than in KH2. Maybe since I become much better when I play KH2 than in KH, but I found the boss to be extremely easy. {Spoiler}Plus I hated having to blow up the spaceship during the final boss battle in KH2. I was fine with Yu Yevon. The guy pathetically hung on to life in this form. It made sense to destroy him like squashing a bug.

I seem to notice that Bethesda games tend to have pretty lame final bosses. I'd add the boss from Fallout 3 to the list.

Joker in Arkham Asylum. Was expecting a little more out of the battle. I'm actually nervous that the end of the current Joker storyline in the comics is going to be weak based solely on how weak the battle in Arkham Asylum was after such an awesome build.

I've never finished MK4, due to a lack of playing from that one weekend I rented it, but what was so disappointing? I recall MK to that point, as a whole, was generally cheap and unfairly difficult. Bowser in Super Marion Sunshine. I know! Which was quite odd, considering I still think of it as the hardest main-series Mario titles to this day. Well, I say 'main-series', but I recall Shiggy retconning it to spin-off status during the Wii's heyday.
