For years now I have avoided shows until they get renewed for a season 3 because so many gets cancelled early. What shows may I have missed that ended properly despite cancellation?

I just finished Party Down and it felt like that wrapped itself up pretty well after two seasons.
Pushing Daises did a super quick wrap up at the end of an otherwise stand-alone episode and it really left a sour taste for me.

are you asking for shows that ran only 2 seasons but still got a good ending?
I didn't watch it but I hear good things about Firefly and I was told they ended it quite nicely with the movie Serenity

I hear really good things about Freaks and Geeks. But from reading the last episode. It doesn't seem like it had a great ending.
Also I just asked my girlfriend. She says if you like Horror and Mystery then check out Harpers Island. She says it's only one season. But that's all it was intended to be, so it gets a good ending. She also says Angel only lasted a few seasons (I think 5) before it was cancelled. But she says they did manage to rush an ending episode out.

No. Rather than do a 6th season, they settled on the movie "Is it College yet?" which basically served as a series finale

I actually think the movie did a pretty solid job of wrapping some things up It tied up all loose ends and made Daria and Jane's friendship come full circle.

Enterprise. It wasn't very good, but it was an actual conclusion.

It is a fitting ending. The whole season was about Lindsey trying to discover who she is. And in that last episode it seems like she has figured it out.

I hear really good things about Freaks and Geeks. But from reading the last episode. It doesn't seem like it had a great ending. I can't remember exactly what happened but I think this was one of those that suddenly felt rushed because they knew they were cancelled and tried to have some kind of closure. I'm the same, I wait until I know something that seems interesting I know will have a definite conclusion. The only thing I've started watching new despite wondering if they will continue is Vikings. I figure if I'm going to invest into a series I want to see it end properly. When My So Called Life got axed too early I was upset and there was Edgemont, hey had a good thing going and the ending seemed awkwardly quick as well. That was enough for me, now I wait most of the time. Same as manga and anime, I can't stand when they have a good thing like Trinity Blood. They had a good reason but still, it was a great series with another forced ending.

Dollhouse. Whedon knew the 2nd season would be his last, and was able to wrap the story up as a result. It was a bit rushed because he didn't have time to properly build everything he wanted to, but I still think it came off pretty well.

Lasted longer than 2-3 seasons, but MST3k.
