Are there any kind of matches that you can't find a way to care about, no matter what? Are there any that you could go your whole life never seeing again?

Hardcore matches. To me it's not any fun to watch people break kendo sticks over each other's heads. That isn't wrestling nor is it entertainment to me.
Cage matches. BORING.
Those two immediately come to mind.

Cage Matches tend to be very boring. Especially when the door is used as an escape route.
I've yet to see a good "object on a pole" match.

Inferno Matches because the inherent danger of uncontrollable fire makes it impossible for the participants to have a halfway decent match.

I've never been a big fan of Falls Count Anywhere matches or any match that encourages brawling in the crowd. There have been some good ones, but for the most part it looks like two guys trying to use as much of the building as possible and not, you know, trying to win the match.
Same with time limit draws, especially tag team ones. Guys are never going for pins, they just go through their movesets. Again, it can be done properly, but most of the time it isn't.

I'd say the dreaded Chairs match but it has brought me too much amusement even if it is really lame. I guess I think any match type can be entertaining if done properly.

No matter how good the competitors in the ring are, and no matter how outstanding the match itself is, there's this black cloud just lingering over it and you know the match is going to end with some sort of chicanery.

Funny how WWE booked Cena vs Ryback in 3 of those matches in one night. Its like they didn't want anyone to care.
