I had a bad ass Monte Cristo with Swiss Cheese at a bar a few years ago.
It's a really good breakfast sandwich that is easy to make.
Two slices of French toast Grilled/fried ham Swiss Chess Topped with powdered sugar and dipped in fresh maple syrup.

Sloppy Moe Sandwich (Recipe courtesy of Vincent Price. Yes, that Vincent Price.)
Ham (Vinny calls for Fresh sliced Danish ham, but really... Who has that? Lunchmeat works perfectly, provided you get it sliced as thinly as possible.) Swiss ("...So thin you can almost see through them - and I don't mean the holes.") Mayo (I add a little lime juice to mine.) Rye bread
Spread the mayo on both slices of bread. The key with the cheese and ham is to alternate - a slice of cheese, then a slice of ham. I usually go about seven to ten meat/cheese layers, depending on how thin the people at the deli cut everything. Price refers to it as "high and tight." Add one extra slice of cheese if needed - there should be a layer of cheese between both slices of bread and the ham - and the other slice of bread. Cut in half before eating. (That is seriously important.)

Take bread dough, roll it out and lay swiss cheese and thin sliced ham on top. Roll it up, pop it in the oven and have an orgasm when it's done.
I like double cheesing my Reuben as well.
Although my favorite way to eat Swiss Cheese is simply by itself.
