It depend on the person I'm showing it to.
If it's someone aware of some of the stigmas & cliches of wrestling... Then I'd show them Foley/Taker king of the Ring.
I once dated a woman who was oblivious to the fact that wrestling was predetermined. for someone like that, I'd say show them MITB 2011. Great card & amazing storytelling over the course of the show.
If it's someone who hasn't watched in a long time, or is cynical when discussing pro-wrestling, then I'd show them Cena vs Lesnar at Extreme Rules.

MitB 2011.
My now fiancee refused to give wrestling a chance, so I'd consistently beg her to watch a show with me. Finally, she agreed to watch this one. She's been a fan ever since. If it worked for her, it'd work for anyone.

Mind you, I'm only considering recent-ish stuff. If we're going back to the Attitude era, I could think of a few things.

I would love to say any Wrestlemania from 24 to 26 soley on the either HBK vs. Flair, or his two matches with Taker, which are three matches that encapsulate everything amazing about pro wrestling, but in doing so would also require me to bore the shit out of this person for 3.5 hours almost as if I wanted to punish them for something.
Wrestlemania 17 is a safe choice, the One Night Stand PPVs are great. I really enjoyed Wrestlemania 21 and find that to be an underrated one, great matches, two huge stars made, MITB was invented (though I'm starting to wonder if that's a good thing), Angle and HBK had a phenomenal match, two fatasses mashed their against each other for a while. I'll throw Wrestlemania 21 in the mix.

To try and step away from the obvious (and correct) answer of Wrestlemania 17, I think any show from late 2000 would be good I think wrestling was at its all time peak in that time. Great matches and, storylines I cared about. I think a new viewer could be dropped in blind and come out knowing what wrestling really means.
Invasion and Survivor Series 2001 also had a big fight feel and hot crowds. Explaining to a first time viewer that there's gonna be a ruck between two gangs will draw 'em in.

I actually disagree with MitB 2011. Sure, it was wall-to-wall awesome, but the main storyline with Punk is kinda Meta, so it's something you can IMHO only enjoy if you are already into wrestling.

I would probably watch the next WWE pay-per view with them first. If they're not interested in the current product, there's little point in showing them anything else. Smart answer. I like the way you think.

The TLC match with the premiere of the Shield. That was the one that really got me excited for wrestling.

WrestleMania 19. Not only a good PPV but it even has a great documentary about the event itself so they get a great backstage look into wrestling.

Wrestlemania VII.
I've always said that the two best examples I have to show people exactly why I enjoy pro wrestling are Savage vs. Warrior at Wrestlemania VII and Robocop saving Sting.

I already said Wrestlemania X-Seven, but I will offer 2 other choices.
Summerslam 1998 - Great card, fun matches, ladder match, and a great main event
Wrestlemania X - Probably a bit too old to show, but if bret vs owen or hbk vs razor don't do it, I dont know what will!

Every year I invite a couple wrestling virgins (or past fans) to watch the Rumble and every year I convert at least 1 back to active viewing. I've noticed Rumbles are just about the most entertaining thing for them because they are not always aware of who's who and they honestly think a good 2/3's of the roster could win it all. Plus, you don't need any back story to enjoy a Rumble. The same match also normally has a little bit of everything... a buffet of wrestling so to speak. Dude hasn't watched wrestling for 15 years, see's Diesel come out and goes apeshit like a school girl. You just can't achieve this kinda thing any other time of year. Yep, I do the same thing for every Rumble and Mania. A lot of my friends get excited about it now and watch the RAWs leading up to it.

Backlash 2000... if they don't get carried away by that main event... plus you've got the hardcore battle royale (with Crash climbing the swinging hook!) 3 decent tag team matches, Benoit vs Jericho in a cracking match, Malenko versus Scotty 2 Hotty in a brilliant match. Something for everyone indeed.

IMO there's really no point to showing them an event where the coolest guys to cheer for are people that don't wrestle anymore. Don't get them into wrestling and have them fall in love with Stone Cold or Rock or Mankind or Angle or Benoit or whoever. Show off the newest and greatest performers - Orton, Cena, Bryan, Punk, Shield.
