I assume by "done them well" you mean made it so it's realistically harder to pick them up and such in the game as it should be in real-life? If so, I think the answer is no. The closest I can recall a wrestling game coming to that goes all the way back to Raw for the Super Nintendo. They only had Yokozuna and Bam Bam Bigelow for big characters, but you could adjust all the characters' attributes with the right cheat codes, making them faster or slower depending on how high you adjusted their weight. It was so much fun making Yokozuna as fast as the 123 Kid.

Smackdown vs Raw...2007 I want to say? As I recall, it had a pretty good weight detection system. As did one of the Day of Reckonings.
Honestly, it's hard to put in because it just leads to a lot of characters becoming no fun to play as.

Here Comes the Pain had a weight detection system that made it pretty much pointless to choose Rey Mysterio.

Yeah, I think the non-lifting alternate moves thing is as good as it gets.
The No Mercy "let's just keep trying to body slam him" system is probably the only thing I really dislike about the game. It just gets repetitive and kills the pace of matches.

No, that was terrible and made it pointless to wrestle as super heavyweights. Yeah, your opponent may have failed at slamming you if he wasn't super strong but once he managed it you were pretty much done. However, there are hacks for No Mercy that make the game much more playable in that respect.

There was only one big guy (Andre) but was impossible to really do anything to him in Superstars. I think only Bossman and Honky could only do anything grappling.

And not only that, one of the tasks in the Challenge Mode (remember that?) was to beat JBL as Rey on Legend difficulty and you couldn't even kick JBL without hurting your foot. JBL!

I'm pretty sure you can do any move to the G sized wrestlers in the Fire Pro games.

It was overpowered, but SVR11 definitely favored big guys
