I'll go with Brodus vs Big Show from when Show has his heel run. They teased the Brodus vs Big Show match perfectly and actually made it look like Brodus had a chance against Show so I was looking forward to a good, competitive match between the two with Brodus shocking everyone by putting up a good fight before eventually losing. Instead we got a minute squash match.
Also Hogan vs Regal, which I looked forward too thanks to Regal's awesome promo where he said Hogan "Pranced around like a 50 pence tart". The match, if I remember right, lasted like a minute before someone interfered.

Triple H vs. Randy Orton from Wrestlemania is the perfect example of this. Orton looked like a complete psycho going into the match and Triple H should have destroyed him in a street fight. Instead it was a flaccid regular match.

The build to Rock/Punk was pretty good IMO. The match left something to be desired.

HHH v.s. Randy Orton - 3 Stages of Hell - Vengeance? 2009.
Cena v.s. Orton - Hell in a Cell 2009. Orton just beat Cena clean, since it was No-DQ to begin with.
Undertaker v.s. CM Punk - Hell in a Cell 2009. After the Breaking Point screwjob, Punk looked like he might have a chance to make it out with the title and continue his awesome reign up until that point. And…. he lost in about 11 minutes clean.

John Cena vs JBL, Wrestlemania 21. HBK vs Angle going long really let the air out of this one; the ending was pretty anticlimactic and it wasn't the best start to the crowning of the new guard.

John Cena vs. John Laurinaitis. I pretty much called the Big Show heel turn, and I wasn't expecting a four star match. But when I heard that Big Johnny was training to get back in ring shape, I was hoping for a semi competitive match with Johnny getting some basic offense like scoop slams or a suplex.

Ryback v Mark Henry at WM29. That match had a lot of build going in, with all the strength challenges from week to week, and it stunk up WM29 noticeably bad. They had a perfectly fine match recently when Henry came back bald, so it wasn't just the the guys being bigger.

Is it because "hurr durr HHH"? Because that's a dumbass reason, imo. Trips should have free reign to annihilate Orton in the match. Instead it got hamstrung by that stupid "if HHH gets DQ'd, he loses the title" stip.

Because Triple H never lost an important one-on-one match to Orton with the notable exception of No Mercy 2007 where he still looked like the better man. Before that, he utterly buried (BERRIED!) Orton at the 2005 Rumble. Triple H should've lost at Mania and afterwards (or on Raw) he could (and should) have gotten his revenge via beatdown. Orton was white-hot as a heel in early 2009 until Trips made him look like a chump.

Orton should have won the title at Backlash (which he did), but Trips should have won at Mania. Although it should have been a streetfight, where they just beat the tar out of each other.

Another one would be the Christian/Shelton ladder match for the ECW title. All the talk about "stealing the show" got me really excited for that match, as did the possibility of Shelton winning the belt. While the match wasn't horrible, it underwhelmed me.
