Ok, yes her backstory in the original Mario Galaxy may hurt this theory, but hear me out:
-Can travel through the cosmos. -Is a mother figure to stars -Has numerous magical abilities -Seemingly immortal
So am I wrong for theorizing that in the Mario universe, Rosalina is a divine being?

She is a magical being, but not God. There are several characters in the series that have similar amounts of power. Particularly characters in the Paper Mario/Mario RPG series, as I recall.
Bowser, for example:
-Can travel through the cosmos. -Is a father figure to the Kooplings and Koopa Troop -Has numerous magical abilities -Seemingly immortal

See the first New Super Mario Bros. for proof of that.

Bowser can be resurrected because he's special!

Yeah, I think she's just a powerful sorceress or perhaps a demi-godess as best due to her connection/life with the Lumas.
but as her origin is in Mario Galaxy as you pointed out she is not the Major Deity of the Mario Universe.

Bowser's seeming immortality is because others revive him. See the first New Super Mario Bros. for proof of that. True enough, but I have a feeling that wouldn't work on Koopa Troopa #457 of the Red Shell Division. Bowser can be resurrected because he's special! Maybe Mario should try chopping off Bowser's head that usually takes care of immortals. "There's a can be only one, wahooooooo!"
