Are the shows on schedule able to be seen on demand? Like if I joined now could I watch the debut of NXT from this week?

I ask because I have satellite internet and streaming is only worthwhile between 12-5am and can't watch Mania live.

Yep. Once a show premieres on the live stream it will be available on-demand. (Because of contractual obligations this year's Elimination Chamber is an exception and won't be available until late-March, but after that PPVs will also be available for on-demand viewing immediately after they air.)
