Seeing how for the most part the format of the show "The Monday Night War" is liked, I was wondering what other shows, either full series or one-offs, could be done like this.
So, do you guys have any ideas?

I can't wait for the Monday Night War Part II where they cover the short time TNA was on Monday. One side of the screen, Cena or some similar star is doing something, on the other side Sting in a Sting mask.

A one off special of WWECW. I wanna hear how it started off promising with the One Night stand shows, the December to Dismember shit show, and how it just became a typical wrestling C show. What were the real intentions? There are plenty of positives (roster development-the launching pads of the likes of Punk and Sheamus) and negatives (Not being remotely close to anything of the original, Vince Mcmahon ECW champion) Would love to hear the points of view of all those involved. Heyman, Styles, RVD, Dreamer, Vince, Big Show

The Golden Era/Hulkamania era focused
Part I: The Beginning (WM 1-4) How it began, have Vince and Hulk talk about their relationship, how close they were, live on the road, No Holds Bared, hollywood endorsements, Rock n' Wrestling, what they intended from the start, how they capitalised on the success their visions for the future then
Part II: Still Runnin' Wild (WM 5-7) Hogan as an established star, how the relationship changed from two buddies to a promoter and an egotistically, highly/overpaid diva of a star, interviews from others of the time to speak about their resentment at Vince and Hogan for maintaining his Superman push, what worked and what didn't during that time, regrets, missed opportunities
Part III: When It Comes Crashing Down (WM8 + to about WM10) Increasing hostility between the pair, steroid trial, sex scandal scandal, personal issues, indictment, Hogan's departure, what people felt about WM9 etc.

I want more backstage stuff rather than documentaries. Journey to Summerslam: The Shield. That is exactly what I want to see more of. A insight into the life of a WWE superstar, basically.

I want to see the prequel to the Monday Night Wars, a documentary on Vince buying up the territories. They could focus on different territories and the product they were running at the time that Vince came in and took over. I think it would be pretty fascinating to hear Vince talk about the stars he was targeting and from some of those stars on what made them jump ship and whether they regretted it. Obviously someone like Hogan or Piper have no regrets but some of the original guys didn't get over like they probably hoped they would and they might wish they had stayed in their home territory.

Same, although I enjoy all the talking head programs. Countdown, WrestleMania Rewind, etc. The only time I really dislike it is when they segue to old interviews with Miz every other minute, or have Summer Rae read off of a cue card about wrestling she's never actually seen.

"The baffling story of TNA" would be essential viewing. The Miz as a talking head logically ripping TNA would be gold.

New Show Concept: "Sunny Days"
Sunny talks about Sex, Drugs and crazy parties/road stories and compares them to similar stories in other promotions.
it's a one hour show with 957 episodes.

I want a "creating a superstar" documentary as a talent gets followed reality show style from NXT to the main roster and through a championship push.
I'd like to know who these people are. I want to know what their drives and motivations are about. What do they put up with on the road. What pressures are there at the top?
And I want at least 100 more episodes of Legends of Wrestling.

That's pretty much what the History of WWE dvd/blu-ray is So was the original Monday Night War DVD and History of WCW and the Attitude Era and the two nWo DVDs. My point is there is no reason to not do an expanded look like what they are doing now with the series.
