While a lot of his movies have been (for lack of a better term) shite, I've heard Adam Sandler's a pretty nice person.

Karen Gillan always strikes me as adorable.
She's gorgeous, but there's something about her that I just love whenever I watch interviews with her.

From the ones I've met personally, Weird Al and Andrew WK top the list.
A few of my friends met Mike Nelson, Kevin Murphy, and Bill Corbett at a meet & greet before a Rifftrax show and said that they were all super friendly and talked with everyone for a while. I would have mentioned him even before his passing, but I've also heard nothing but great things about Robin Williams.

Betty White, full stop. Answered my fan mail, and then when I sent a gift to her (inspired by reading about her stuffed animal collection in one of her bios), she wrote a note thanking me.

I met Weird Al on the Touring with Scissors tour in about 2000 or so. He set up a table outside the arena after the show and didn't leave until he'd met with every last fan in line. I had made a couple of custom Star Wars style action figures of him from both that era and UHF. He was genuinely excited about them, and although he wouldn't accept them because he said he'd feel bad about it, he had someone take them back into his bus to take pictures of them. He even posed for pictures with them for me and signed them both.

Katy Manning (Jo Grant from Doctor Who) is a constant joy. Always incredibly lovely to fans and basically everyone she meets, bubbly, amusing, and completely mad in the best way.

I forgot about Rob Paulsen, the voice actor. Such a super cool guy. I met him at a convention a few years ago, and he was always hanging out in the hotel lobby or on the convention floor just talking to people. He'd also hang out with the people in line waiting for his own panel room to open up, and would sign and take photos for free if you were able to catch him away from his official booth. He was also offering recorded messages along with autographs, which I bought, and instead of the super brief things the other voice actors were doing, he went on for a good five minutes as Raphael from the '87 TMNT toon.

I met Michelle Rodriguez a few years back. Very down to earth and incredibly well read.
James Franco when met him was super chill and surprisingly artsy.

Every voice actor I've had correspondence with has been super-awesome to me. Of those I've met personally, Mike Doughty's a good guy (though he's not a celebrity on the level of most)

say what you will about Axl Rose in other aspects, but the dude always gives fans the time of day after shows, hangs with them signs whatever poses for photos stands around telling stories and what not just dont act mega intimated by him or be a troll to him and your alright. ditto to Izzy Stradlin who at the gnr gigs hes done from 2006 - 2012 has been very open with fans and will also sign whatever you put infront of him and takes photos and just chills out with em.
Liam Gallagher is another one that ive seen hanging outside the venues talking to fans meeting everybody signing everything and taking photos, smoking and just shooting the shit with em.
Peter Criss from KISS was so mega mega friendly when i met him way better than Ace who didnt really say or do anything other than sign take a quick photo and thats it, Peter wouldnt shut up and its wonderful he really makes you feel that you have known each other for years!
Billy Corgan has his up and down days but hes mostly been good with me really good to pull you aside when you ask his advice about the music industry and singing and writing to give you 1 on 1 times with him when he gives you advice on that stuff.
