Aaron Paul and Bryan Cranston seem like cool dudes. I heard Aaron Paul will call you a bitch if you ask him nicely. Hell apparently he doesn't mind when dudes make him call their girlfriends to call her a bitch.

Ron Perlman was supercool and approachable when I randomly met him on his vacation.
All the members of Iron Maiden are very down to earth and friendly, even Bruce Dickinson who has a reputation of being a bit of a dick.

Robert Downey Jr is a pretty funny guy even outside of the movies,and very charismatic.

Betty White, full stop. Answered my fan mail, and then when I sent a gift to her (inspired by reading about her stuffed animal collection in one of her bios), she wrote a note thanking me. Petula Clark was also always very nice when I saw her in concert. Joanna Lumley I only met for seconds, but it was one of the most memorable days of my life, plus she signed her bio when I sent it to her for that purpose.

When he was alive I read from those who met him that said Michael Jackson was truly the nicest celebrity they met. Given what people think about his personal life, the accusations he faced(Still think he was innocent), and his popularity worldwide I think most people would be a huge prick. However, fans who just happened to run into him at amusement parks, Neverland, or autograph signings said that the interviews were no act he was a sincere, kind hearted, and soft spoken individual.
I met Katt Williams once in the mall and just asked him how he was doing, he was very nice about it and asked how I was doing as well. After that I didn't bother him and left him alone. Felt kind of bad when he was in Bath and Body Works attempting to shop for his step daughter, only to be swarmed by what seemed like the entire mall blocking the entrance.
Also heard nothing about great stories about Robin Williams, Weird Al, Eddie Vedder, or in his drug/alcohol filled days I heard Scott Stapp was absolutely unbearable as a human being. However, apparently since cleaning his act up I heard is very humble, takes time to talk to the fans, and is very approachable.

Not from personal experience, but I hear that for the megastar she is, Lady Gaga still takes time out to sign autographs and talk to fans.

I met Stephen Amell at a comic convention last year, and that guy is ridiculously friendly. He came off like just some guy you'd meet standing in line to get a hotdog at a ball game and just shot the breeze with.
