The DragonLance Chronicles and Legends by Margaret Weis and Tracy Hickman are really good fantasy books.

Not fantasy but a good one off book is Farenhiet 451. Also Dean Koontz is someone Stephen King fans should check out.

I highly recommend checking out George R.R. Martin's anthology Dreamsongs, a collection of his short stories. They span just about every genre, and all are worth reading.

Rendezvous with RAMA The Hyperion Cantos Uplift Saga Dune Princess of Mars (John Carter) (set on Mars and there are some sci-fi elements, but it really is more of a fantasy novel) The Stars my Destination Red Mars (really good book trilogy about terraforming Mars)
Fantasy The Legend of Drizzt (I've only read the first three books, but they were great)

I have not read them, so I cannot speak to the quality, but I've heard nothing but good things about Lev Grossman's The Magicians trilogy.

The Malazan Book of the Fallen by Steven Erikson (and other Malazan books by Ian Cameron Esslemont, though not as good as Erikson's) The Wheel of Time by Robert Jordan (and Brandon Sanderson) Realm of the Elderlings (Farseer Trilogy, Liveship Traders Trilogy, Tawny Man Trilogy, Rain Wild Chronicles, Fitz and the Fool) by Robin Hobb The Dark Tower by Stephen King The First Law (including stand alone books) by Joe Abercrombie Mistborn by Brandon Sanderson (his stand alone books are also worth reading. Havent started The Stormlight Archive yet but hearing good things) The Gentlemen Bastard Series by Scott Lynch (not finished yet) The Kingkiller Chronicle by Patrick Rothfuss (not finished yet) The Night Angel Trilogy by Brent Weeks The Powder Mage Trilogy by Brian McClellan
Those are some of fantasy series that I have read and would honestly recommend all of them to a fan of fantasy. Some of them aren't as good as others but still worth reading.
Malazan and Wheel of Time are both rather long so would take you some time to read but most of the others are trilogies so will be easy to get through

Discworld is the very first thing you should aim for. Start from Mort and then go on from there. You won't be disappointed.
