Weird cause up until Episode 7 May was Star Wars Month Hell the date they originally had of May 26th was a day off of A New Hope's 40 year anniversary.

Good, that gives them more time to add similar plot points to The Empire Strikes Back into the script.

I'm wayyyy good with this. Three years between movies would be even better. I don't want this rushed, and it needs to feel new and hyped to the high heavens every time I go see a new one.

I was surprised that they didn't just wait until May 2016 to release Force Awakens. However, I guess with Disney now making three Marvel movies a year, they felt the need to move Star Wars since there is a lot of crossover audience.

It kind of made sense anyway because Disney was releasing a similar space opera movie just a couple weeks before in Guardians of the Galaxy Vol. 2. Like CM Metal said, both audiences kind of crossover so they would risk losing money on both films.
If they're going to rip off Empire Strikes Back (which I don't think they will), then Rey should run about carrying Luke Skywalker on her back. I just think that image would be hilarious.

Rey: Is this really necessary? Luke: Yes, This is essential to the training.

I'm cool with this, the Force Awakens was great, Rogue One intrigues me but it felt like Episode VIII was coming too soon after VII

Very smart. Blockbuster movies like this are not often released at that time of year, usually only 1, so there's no major competition like there would be in the summer.

Oh no how is a property like Star Wars is supposed to compete with a sequel to a film which by then will be 8 years old, has little to no fan base, and dispite making a lot of money (thanks to its techical achievements) and even a Best Picture Oscar nom (again due to techical achievements) is today regarded kind of meh to shithouse?

Not too surprising given it'd be kind of stupid to release two of them within about six months of each other like what was the plan.

Good, that gives them more time to add similar plot points to The Empire Strikes Back into the script. I fear for the odds of the Resistance in the battle of not-Hoth.

Thanksgiving/Christmas is a big season for movies in its own right. This year even with studios consciously steering clear of Star Wars you had Mockingjay pt 2 and The Good Dinosaur, which both underperformed but could have possibly done as well as any other movie. That said wherever Star Wars goes its likely other things will be moved until something changes.

Good, that gives them more time to add similar plot points to The Empire Strikes Back into the script. I really wish this complaint would die off already. There's a big, BIG difference between adding moments in a film that work as sly reminders to a previous entry and flat out ripping something off, and Force Awakens was the former.
