I mean, I think that's what the original intent of the Daniel Bryan character was before he became Kicky Mcheadbutt, and I still think it's a good gimmick.
Just an unassuming looking guy or gal armed with a plethora of submissions that can get the tapout from anywhere, even sloppy pinfall attempts.

Zack Sabre Jr and the Deathly Armbars Yep. ZSJ is the first dude I thought of. Unfortunately if he ever does sign with WWE, I don't see him doing that well. He's not exactly Vince/Dunn's type. I still want to see him in NXT though.

It'd be better if they were an actual wizard.
"I can do a bunch of MMA holds from OUTTA NOWHERE!" doesn't sound like all that exciting a character.

I don't even mean MMA holds like heel hooks and armbars, per se, though you could use those if you want.... but someone who is well-versed in all the classic uses and applications of standard pro-wrestling holds. Camel clutch, Boston crab, Cobra clutch, Surfboard stretch, Sleeper hold, Cloverleaf, Figure 4, Indian deathlock, STF, etc. It'd be a great way to make a smaller guy look dangerous, especially if they're not a high flyer.

Going back to a submission style would be easier on Daniel Bryan's body, I could see him being a William Regal or Finlay style wrestler and still being over just for being out there.

Why not just give them one hold that everyone submits to? That way, in the narrative, he has a feared submission hold that any wrestler who faces him tries like hell go avoid. And then when the fans see that hold applied, they can react accordingly. Look, I'm not the biggest fan of WWE's match formula. Once in awhile, I'd like to see a ppv main event last 5 minutes because it's such a break from the formula and will keep the fans invested in every nearfall. Sometimes I'd like to see a guy win a match with an appropriate nonfinisher or nonsignature move. But I get why they do it - people like familiarity. It's why guys tend to keep their entrance themes and 5 moves of doom after they reach a certain level, the majority of fans want to see them.
