I thought Tiana was pretty inspiring. I also found myself liking Aladdin a lot- he does makes his situation worse through lying to Jasmine, but given his circumstances and young age I realized he was dealing with insecurity, afraid he couldn't possibly be accepted for who he actually was.
Judy Hopps was of course as pure a baby face as you could come up with. And Hiro Hamada was put through some serious stuff, man. Ditto Dumbo while we're at it.

Genie. Has is a slave and cannot act on any free will. And has no control to stop himself from granting wishes to Jafar. And when he is finally wished free he doesn't even realize it because he is used to being a servant.

Mulan had good qualities to her. Resourceful, determined and did everything she could simply to save her father's life. Also killed an entire army with one shot, so that earns points as well.

Simba, sure he had that spell where he refused to take responsibility and loafed around with Timon and Pumbaa but really, he was just a kid who thought he was responsible for his dad's death and had been chased out of his home and once Nala gave him a kick up the arse he went back to fight Scar.

Most of the denizens of the Hundred Acre Wood are pretty likable. All have their slightly negative quirks (Pooh being a bear of very little brain, Rabbit as a neat freak, Tigger's hyperactivity, and Owl's pompous assumptions), but I can't ever recall disliking any of them.

Ralph in Wreck-It Ralph in a way.
Like Genie, he didn't get to choose his lot in life. He was created to be a villain in a video game, and that was his job, and he got no respect for it. Even when everyone was gone, and he had to deal with scorn just because of the character he played in the game.

Definitely not Tiana, got tired of her constantly having to say how self sufficient and focused she was.
In terms of Save the Cat moments to get the audience behind them...
Aladdin gets points for having nothing, but giving up what he had for those worse off than him.
Belle too, for sacrificing her freedom to save her dad.
Mulan too, for risking life to save Dad.
